Chayote Soup

Red pepper flakes are really spicy. I like a lot of heat, but this is a bit much for such a mild squash like chayote. I'm letting mine sit for a day and will add a dollop of sour cream and some crumbled queso fresco cheese for dinner tomorrow night. I'm sure that will help tame the heat too. This is a keeper!!! Note: wear gloves when peeling the chayote. It leaves a funky film that doesn't wash off right away. Weird. ;)

Creamy Caramel Flan

WONDERFUL and super easy!! However, I'm giving it only 3 stars because of the sugar situation. I'm reading that several others had the same problem with the sugar hardening immediately and then sticking when it was inverted. I followed the directions word for word and this still happened. So...it tasted so good that I'm willing to give it another try. I'm probably just going to sprinkle the pan with brown sugar and pour the filling over that. It should work...we shall see!!!

Grandma's Lemon Meringue Pie

Well, I've just finished my first ever Lemon Meringue pie. Unfortunately, I don't like the pie, but it's my husband's grandpas FAVORITE...so....I feel confindent that he will LOVE it. It was fairly easy to make. I think meringue is a hit or miss kind of thing. The peaks didn't get as stiff as I would have liked them, but I think it depends on the weather and it's rather humid here today. Overall it was easy...it smells great and I'm sure it will taste just as great. Thanks for the easy recipe.

Maple Teriyaki Salmon Barbeque

This recipe may have been a bit bland without adding a few things. I added a dash of ground cayenne pepper & fresh grated ginger. I didn't have any apple juice on hand so instead I used orange juice. I think the orange flavor is a little more "Asian" anyway. So...with the additions and substitution it was very good. Oh, and I used Sugar Free Syrup and light OJ to cut the sugar and it was still GREAT.

Original Homemade Italian Beef

Fantastic! I did take the advice of some of the other reviews and cut down the amount of italian seasoning to one packet. You can always stir in a little extra after it's all shredded if needed. Served it on some crusty rolls w/provalone cheese and extra peppercinis. Excellent!!!

Wow! This is absolutely the best drink that I have had in a long time!!! The taste, the presentation, EVERYTHING!!! I thought it would be a little sweet for my taste because I'm more of a dry red kinda girl....but wow....I love it!!! Kudos!!!

Wonderful! I made a batch with exactly what you had for my hubby and I made a lower carb version for myself. They both turned out awesome! FYI...lower carb I omited the fruit and flour. I added two scoops of low-carb protein powder and 2 T peanut butter. They were great. I'm going to experiment with this base recipe using bananas, blueberries, dried cranberries....wow the options are endless. Thanks so much!!! A++++++

No Bake Rum Balls

Fantastic! Followed the recipe exactly. I tried one when I first made them and then let them sit for 3 weeks. WOW! They are now the best rum balls I've ever had. I did have to roll them in powdered sugar again before taking to friends. But that's just to make them pretty! Thanks so much for the great recipe!

Chocolate Covered Cherries

Great recipe. I took another user's advice and soaked the cherries in port wine for two days. I found that the fondant part of the recipe made A LOT. I didn't use all of it. My step-father is going to LOVE these. He is a BIG fan of port and chocolate covered cherries.

Fried Mozzarella Cheese Sticks

For a lower fat version I breaded them according to the recipe and then into the freezer for 2 hours. It helped them stay together more. I'm going to try spraying them with non-fat cooking spray and baking them too. I can't wait!!!
