Quinoa Black Bean Burgers

The best black bean burger recipe I've ever had! Used red peppers (not yellow) because that was what I had. Otherwise followed the recipe except omitted the vegetable oil and baked the patties as recommended by another reviewer. (At 400 degrees on a cookie sheet with a touch of spray oil.) Also used Sriracha hot chili sauce which I had on land. This is my new go to vegetarian bean burger recipe. I love it!

Roasted Vegetables

This was great (and healthier) with a few changes I made. I used 3 russet potatoes, a yellow onion, 3 carrots and only one Tbsp. olive oil and 1/2 Tbsp. balsamic vinegar with the fresh herbs. Half-way through cooking I added one large eggplant cubed, 2 zucchini, 1 red peppers and 2 green peppers with another 1 Tbsp. olive oil and 1/2 Tbsp balsamic vinegar. This uses 2 Tbsp oil vs. 1/4 cup as recommended in the original recipe and it was fine.

Seasoned Turkey Burgers

Fantastic! My picky teenage son didn't even realize that they weren't made of beef and said they were his 'second favorite' of many hamburger recipes I've tried. I loved how lean they were and easy to cook in a pan on the stove, without ending up with them swimming in fat.

Mushroom Chicken Piccata

I made it as written but without the flour, salt egg and milk on the chicken. My husband loved it, but thought more salt and reduction of the sauce would be good. My teenager doesn't like mushrooms, so. . . We served it over brown rice which was ideal for my husband and I. This will definitely go into my chicken recipe rotation.

Mexican Whole Wheat Flour Tortillas

Even though I couldn't find my rolling pin and used a wine bottle, these turned out fantastically. Followed the recipe exactly and my husband and teenage son both requested that I never again buy tortillas in the store. Thank you so much for sharing this recipe!

Slammin' Salmon

Excellent. I made a couple of changes---skipped the salt because my soy sauce was quite salty. Also, I skipped the red peppers because my family isn't a big fan of too much 'heat'. The salmon got rave reviews from everyone at the table. I'll definitely make this again!

Easy Quiche

I switched this recipe considerably (with respect to the additions and my husband loved it. I halved the butter and used it to saute some leeks (instead of broccoli) and then added 8 oz. 'fake' crab in place of the ham and swiss cheese (`2 cups) in place of the cheddar and parmesan. It became a great crab quiche.

Beef Stew VI

Excellent! I did follow other reviewers comments and dredged the beef in flour and garlic and onion powder and added a bit more cornstarch. I also added some mushrooms because I love them and had some. My teen age son who had 4 impacted wisdom teeth removed 4 days ago said he loved it---quite high praise for the tenderness of the meat and he asked me to make it regularly, particularly after his heavy practice days on his high school rowing team.

My husband loves this recipe--says it's really tasty without being too spicy hot. I've made it many times with different sausages and it always tastes great. Even with homemade (unsalted) chicken stock, I haven't had a need to add additional salt to the recipe.

Homemade Black Bean Veggie Burgers

Fantastic. As recommended by another reviewer, I used oats instead of bread crumbs---healthier in my opinion. Also, instead of using a food processor, I cut the onions and peppers into small pieces added minced garlic and cooked them briefly (in a non-stick pan) without oil. I'll be making this many more times.

Shrimp Creole

Excellent recipe. I doubled the vegetables and used 31-40/pound shrimp. Cooked them in the sauce during the last 5+ minutes. It was great and quite quick and easy. I'd give it 5 stars, but my husband who doesn't like spice thought it was a bit too spicey.

My family (which I must admit are rather picky and not fond of spicy food) didn't like this at all--even though I put only one jalapeno pepper rather than two. They requested that I delete it. I thought it was okay (but far from great).
