Southern Pulled Pork

Excellent, Use the cajun seasonings from this same site so that you can adjust to your family's preferences--the bottled Cajun seasonings were too salty. Also, skim the fat from the top to make it far more healthy.

Black Bean and Corn Salad II

Sauteed Swiss Chard with Parmesan Cheese

My husband spontaneously commented that this was the best swiss chard recipe he's had and even my picky teenager said it wasn't bad. (I made the recipe as written except I skipped the white wine because I didn't have any.) The recipe was easy, tasty and will definitely be a regular in our home. I made it with red chard so it was a colorful addition to the plates as well.

Salmon Patties I

An incredibly easy, quick and economical way to get your omega-3's. My (quite picky) family members who are used to fresh salmon fillets gave this recipe a thumbs up! I never thought I'd see them eat and enjoy canned salmon. I did add some fresh (Meyer) lemon juice to help add moisture to form the patties and when I next make it (which will be soon, given family enthusiasm) I'll try to up the spices a bit.

Shrimp and Feta Cheese Pasta

This has become a regular on our menu rotation and is my teen age son's favorite recipe. It is fantastic as is. We've served it several times for guests as well. It's tasty, fresh and light. Thank you!

Crustless Cheese Quiche

A great base recipe to add whatever vegetables, etc. you want. Plus, it tastes great without the butter, so it quite healthy as well. This will become a staple in our home--quick and easy and high protein brunch recipe. No longer do I need to spend time making my own crust or run to the store if I want to make a guiche!

Grilled Salmon I

Excellent, My husband thought it was a bit strong after 5 hours of marination. So for him I'd either cut down the time or the amount of marination. My teenage son and I loved it. Also very easy to do with ingredients readily on hand.

Fettuccini Carbonara

This was rich and lovely--my husband and son loved it. But I modified it a bit due to ingredients on hand: no shallots, 4 eggs in place of egg yolks, 1% milk in place of heavy cream and sauted the onions in bacon grease--then drained most of it, but added some melted butter at the end. I've also made it with ham instead of bacon which was good, but not quite as wonderful.

Jalapeno Garlic Tilapia Pasta

My family (which I must admit are rather picky and not fond of spicy food) didn't like this at all--even though I put only one jalapeno pepper rather than two. They requested that I delete it. I thought it was okay (but far from great).

Mexican Whole Wheat Flour Tortillas

Even though I couldn't find my rolling pin and used a wine bottle, these turned out fantastically. Followed the recipe exactly and my husband and teenage son both requested that I never again buy tortillas in the store. Thank you so much for sharing this recipe!

Shrimp Creole

Excellent recipe. I doubled the vegetables and used 31-40/pound shrimp. Cooked them in the sauce during the last 5+ minutes. It was great and quite quick and easy. I'd give it 5 stars, but my husband who doesn't like spice thought it was a bit too spicey.
