Marinade for Chicken

Definitely the best chicken marinade I've made. But I did replace the veg oil with EVOO and also added 2 cloves of garlic for a 10 person amount.

Sesame Noodles

Good recipe which would be great with a few changes. Made it as described, except I added almost of pound of broccoli slaw to the mix. In the future I would cut the seasonings (soy sauce, sugar, etc.( in half, Even though I used low salt soy sauce the sauce mix was still over=powering and way too salty. However, I would make again (with less of the seasoning mix and still add the broccoli slaw. My husband loved it but said please add more pasta to the mix before we eat leftovers.

Lori's Famous Crab Cakes

Fantastic! Used a whole egg and baked them with a bit of spray oil and used fresh off the boat Dungeness crab which we can get in San Francisco area. SO much better than restaurant crab cakes with way too much 'filler'. These were great as they were mostly crab and vegetables--maybe the best recipes I've tried from this site and I've tried a lot! The perfect special night dinner--this one for my valentine of 25+ years.

Layered Chicken and Black Bean Enchilada Casserole

I was looking for something to make that'd use some leftover cooked chicken breasts I had and make them taste 'different'. I just added the spices into the chicken, bean mixture. Added a can of corn (to clean my pantry) and a bit more enchilada sauce because I didn't want left-over sauce. The casserole was great! Even my picky spouse who is not a great fan of Mexican food really enjoyed it. A great way to change up the taste of leftover chicken.

Refried Beans Without the Refry

Fantastic recipe. If you like 'chunkier' beans--just don't mash them much. I (and most of our guests) prefer beans chunkier. I've made this recipe numerous times for guests and it always gets rave reviews. Plus it's healthy and easy. If you're pressed for time you can do it outside a slow cooker--just do a 'quick soak' of dry beans--pinto, black or whatever type you prefer. Then cook them on the stove top with the suggested ingredients and enough water to barely cover and suit your tastes.

Black Bean Tortilla Casserole

Great recipe. Pick the picante/salsa to fit your taste for heat. I also added zucchini (always looking for a way to use them this time of year) to the vegetables and some corn (frozen). Be certain to drain the beans/tomatoes as best you can so that the casserole doesn't have water at the bottom.

Alfredo Sauce

I doubled the garlic and also used 2% milk with a bit of cornstarch. It was great and I'll definitely make it again--and maybe even experiment with skipping the cornstarch so that it's not quite as stiff.

Quinoa Black Bean Burgers

The best black bean burger recipe I've ever had! Used red peppers (not yellow) because that was what I had. Otherwise followed the recipe except omitted the vegetable oil and baked the patties as recommended by another reviewer. (At 400 degrees on a cookie sheet with a touch of spray oil.) Also used Sriracha hot chili sauce which I had on land. This is my new go to vegetarian bean burger recipe. I love it!

Roasted Vegetables

This was great (and healthier) with a few changes I made. I used 3 russet potatoes, a yellow onion, 3 carrots and only one Tbsp. olive oil and 1/2 Tbsp. balsamic vinegar with the fresh herbs. Half-way through cooking I added one large eggplant cubed, 2 zucchini, 1 red peppers and 2 green peppers with another 1 Tbsp. olive oil and 1/2 Tbsp balsamic vinegar. This uses 2 Tbsp oil vs. 1/4 cup as recommended in the original recipe and it was fine.

Homemade Black Bean Veggie Burgers

Fantastic. As recommended by another reviewer, I used oats instead of bread crumbs---healthier in my opinion. Also, instead of using a food processor, I cut the onions and peppers into small pieces added minced garlic and cooked them briefly (in a non-stick pan) without oil. I'll be making this many more times.

Slow Cooker Chicken Stroganoff

I added some sun dried tomatoes, but otherwise followed the recipe exactly. I thought they complemented the other flavors really well. This recipe is really easy. Perfect for a day when you'll be out all afternoon. Best of all it tasted great. My husband asked me to put it into our regular rotation. A huge compliment from him for a new recipe.

Slammin' Salmon

Excellent. I made a couple of changes---skipped the salt because my soy sauce was quite salty. Also, I skipped the red peppers because my family isn't a big fan of too much 'heat'. The salmon got rave reviews from everyone at the table. I'll definitely make this again!

Seasoned Turkey Burgers

Fantastic! My picky teenage son didn't even realize that they weren't made of beef and said they were his 'second favorite' of many hamburger recipes I've tried. I loved how lean they were and easy to cook in a pan on the stove, without ending up with them swimming in fat.

Easy Quiche

I switched this recipe considerably (with respect to the additions and my husband loved it. I halved the butter and used it to saute some leeks (instead of broccoli) and then added 8 oz. 'fake' crab in place of the ham and swiss cheese (`2 cups) in place of the cheddar and parmesan. It became a great crab quiche.

Lemon Chicken Piccata

A great starting point. I made the recipe as written, but it had a bit too strong of a lemon flavor. Next time I'll either add 1/8 cup lemon juice or use Meyer lemons instead as they are sweeter.

Mushroom Chicken Piccata

I made it as written but without the flour, salt egg and milk on the chicken. My husband loved it, but thought more salt and reduction of the sauce would be good. My teenager doesn't like mushrooms, so. . . We served it over brown rice which was ideal for my husband and I. This will definitely go into my chicken recipe rotation.
