Tuna Noodle Casserole from Scratch

I fixed this for dinner tonight & was NOT impressed! It was really BLAH. It was easy enough to make but used a lot of pans! If I decide to try it again, I will definitely add some seasonings to the sauce along with some chicken boullion for flavor & probably part of the cheddar. Sorry, it just didn't pass for me.

Key Lime Cookies II

I was looking for a recipe that would use up a lot of powdered sugar & corn flake crumbs I had in my pantry from another recipe when I found this recipe. I did add an additional 1/2 cup of flour to the recipe & had no problem with them mounding & setting perfectly. The second batch, I doubled, & didn't quite add enough extra flour to make them mound. They still turned out wonderful & more waferlike. Excellent flavor. A definite keeper.

Favorite Banana Blueberry Quick Bread

I made 2 different kinds of Blueberry Banana Bread. I had only 1 slice of this one & by far love it better than the other & I thought it was good. This bread has substance to it & is great in the morning with coffee as well as in the evening with tea. A definite keeper.

This was an easy bread to make that had a great taste. My only negative - the baking time was way off. I didn't get them baked to doneness. I will make again & allow for more baking time.

Zucchini Parmesan

I fixed this recipe for dinner last night. I read all the reviews and made a few changes. I did saute lightly large rounds of zucchini before putting them in a baking pan. I covered them with cooked seasoned ground beef followed by cheese, spaghetti sauce, sauteed mushrooms, onions, garlic, more cheese, spaghetti sauce & topped with cheese. I baked it about 35 minutes and served it over rice. My husband & I loved it!! I don't want to know the calorie count. Could use low-fat cheese for that matter!!

Three Berry Pie

I pretty much followed the recipe, with the exception of adding about 6 cups of fresh & frozen fruit. I did add blackberries to the strawberries, raspberries & blueberries. It was WONDERFUL!! My husband loved it. Have made it twice in one week!!!

Rainbow Pasta Salad I

My husband and I loved this salad after I made a few changes. I did try it as stated also but we liked it better after the changes. I added parmesan instead of moz. cheese and I only added about half the dressing called for. I also added some grape tomatoes sliced in half and the second time I made it, I added salami instead of pepperoni. It hits the spot on a hot summer evening.

Pasta Salad with Shrimp and Basil

I fixed this recipe in the late afternoon the other day and let it meld until the next evening. It was fantastic. My husband and I both like it very much and it was still very good the following day. Definitely will make again.

Rhubarb Cherry Jelly

I read all the reviews and then made a few changes to the original recipe. I used almost 8 cups of rhubarb instead of the 6 and after cooking until soft, I added a 20 ounce can of crushed pineapple along with the jello (which was sugarfree), and light cherry pie filling. I brought it all to a boil and then slow boiled for about 20 minutes, to thicken, stirring often. I water bath canned in sealed jars for about 15 minutes. I can really taste all three flavors in the jelly and it's not oversweet. Fantastic on toast, ice cream, and I'm sure will be great with ham.

Rhubarb Strawberry Jam

I rated this recipe high because of ease in preparation and it tastes wonderful! I did make some additions per remarks of others. I used 2 cups of Splenda instead of 3 cups of sugar, added 2 cups of strawberries in the beginning and added 2 additional cups when I added the jello which was sugar free. Better for dieters and diabetics! I thought the finished product was a little thin for jam, but that could be because of the changes I made. Might try cooking it longer next time. My husband thought it was more like a thick ice cream sauce and loved it. I also water bath canned the finished product so I would have it on hand this coming winter when my husband and I travel. It should make wonderful exchange gifts to fellow travelers during the holiday season.
