Barley Bake

This is an absolute favorite side dish that I often serve as the entree. I use chicken broth instead of vegetable and walnuts instead of pine. I live in an area that doesn't always have the luxuries. When I serve it as a main dish, I double the amount of mushrooms that really give it a meaty flavor without the meat. I've fooled lots of friends. Leftovers are good cold, for summer outings I've added fresh diced tomatos and green onions to the cold mixture, keeping it in a cooler until serving.

Mushroom Lentil Barley Stew

Since I am not vegetarian, I used chicken broth but didn't add salt. Walmart didn't have shitake mushrooms ( I live in rual Western Michigan ) so I just doubled the amount called for, using regular mushrooms. This is a staple recipe in my kitchen, I will use it over and over and over...

Best Ever Blueberry Cobbler

Made this for my boyfriend's birthday. He LOVES blueberries. I've never made cobbler before and was very nervous. I chose this recipe because it had simple ingredients and high reviews. The ONLY thing I changed was, I added 2 teaspoons of cornstarch in the berry/sugar/juice mixture. The consistency turned out perfect. Without it, it would have been runny. His family was impressed. I made lots of points that night. They've asked me to bring this dish for Thanksgiving! THANK YOU!

Raspberry Tilapia

This was a disappointment. It was good sauce, but the fish is too mild to do anything but sit in it. I tried this with chicken breast cut in strips but again, it just laid in the sauce. I may try it on a fresh spinach salad instead. Good sauce, just didn't lend it's self to the fish's taste at all...

Mediterranean Chicken with Eggplant

Great dish! I didn't have the right sized pan so I just added more water and tomato paste and let it simmer on the stove. Sauteeing the eggplant gave it a wonderful almost roasted flavor. I used frozen chicken tenders instead of diced breats, cooked much faster and was still tender. I am going to try this with lamb, or with mushrooms but the chicken was great. Easily found ingrediants, and easy prep.

Peanut Butter Cookies IV

Not too sweet and very peanut buttery. I can't keep enough of these in the jar. I added a quarter teaspoon of cinnamon; a family favorite spice and they are perfect!

Hearty Split Pea Soup

This was a good soup. Less flavorful than other's I've had. I may add a bit of salt or use smoked ham hocks in the future. Served with a hearty bread, like Irish soda or a Wheat it's perfect on chillier days.

Truck-Stop Buttermilk Pancakes

These pancakes are fluffy and flavorful. I added a bit more milk as the instructions suggest to make the batter slightly thinner than measured ingredients. I have made zip locked bags of the dry ingredients with the measurements of the wet (egg, milk, etc.) for quicker future breakfasts. Store any unused batter in a sealed container. I haven't used thawed, frozen batter yet. We'll see if the results are the same. These are now the staple, replacing store bought mixes.

No Bake Cookies II

These are the easiest treat I know how to make. I can get my boyfriend to do ANYTHING if I offer them in exchange. When adding the peanutbutter, I stir well, to ensure a very creamy texture. THEN add the quick oats and vanilla... PERFECT!
