Donut Muffins

Made a double batch of these last night, and I'm making another batch tonight. These were really good! The batter comes together quickly, and they bake up fast. I didn't get 24 from my batter- I got 17 on the first batch and 14 on the second (but my 8 y/o filled the pan on the second batch and overfilled them) I think the cinnamon sugar coating was a bit much at first-it was like getting a mouthful of sugar. But I put all the finished muffins in a large ziploc bag and took them on a picnic, and all the excess sugar fell off and they were perfect. Very cute, very yummy little muffins!

Moist Banana Muffins

These were soooo good. My kids loved them! I mixed the banana with the mayo and then added everything else. The only changes I made were to add cinnamon, and I used half a cup of brown sugar, and half a cup of white. I made 11 big, yummy muffins. They came out kind of crunchy-in-a good way on top, and moist inside. I'll definitely make these again!

Honey-Cocoa Frosting

I made this without the cocoa, using the 1/2 cup of honey, and using light cream cheese (neufchatel) to put on carrot cake muffins. I have to admit, just tasting the frosting by itself, I didn't care for it. It had a strong tangy flavor from the honey and cream cheese. BUT....it tasted really good with the muffins. I would make this again, it was easy to make, light, and I love that there's no refined sugar in it. Plus my kids liked it!

Goof Proof Coconut Curry Chicken

This was my first time making curry, and it came out really good! I stuck to the recipe exactly, but tripled it. Ended up using 6 bone-in, skin-on chicken thighs. I have to say, it was a bit time consuming deboning, trimming, and cutting up the chicken. I think it was worth it though, 'cause you get a deeper flavour from the thighs as compared to chicken breasts. As I was making it, it looked like way to much bell pepper- I used 3 , but it ended up being perfect. Served it with Brown rice that was cooked with half of the water replaced by coconut milk. The coconut milk made the rice deliciously creamy, and brought out the nuttiness of the brown rice. The only thing I would change was adding the 3/4 cup of water, and the corn starch water at the end. It didn't make sense to me to dilute the curry, then add a thickener. I tasted the dish after adding the curry sauce/paste and coconut milk (I used green curry paste) and it was perfectly flavoured.The consistency was perfect, too. After I added the water, it tasted diluted. If it wasn't for that, though, I probably would give this 5 stars- it was yummy!

Creamy Coleslaw

This is the BEST coleslaw I've ever had! It's not traditional dry, sweet coleslaw, but extra creamy and more savory.I shredded half my cabbage on a grater and chopped the rest, so it had a nice crunch.I also ommitted the peppers, carrots and raisins. I did add a little more Dijon for some kick, and a good amount of Mirin (rice wine vinegar) for some sweetness.I also added some fresh ground pepper and sea salt-fabulous!This is my coleslaw recipe from now on!

Beet Bundt Cake

Wow! This was so good-very moist and chocolatety.I used 4 large beets, and baked it in a springform pan.I couldn't taste the beets at all. My husband said it was the best chocolate he ever had,and my kids loved it, too.Great use of all those beets from the garden. I'm going to try this in cupcakes next.

Amazingly Easy Irish Soda Bread

I make an authentic Irish dinner every St. Patricks day with lamb and potatoe leek soup(found on this sight)and this is by far the best soda bread recipe I've tried. I use real butter in the dough, and I cut it into the dry ingrediants with a pastry cutter, That's the only change and it comes out great every time- very moist.Great recipe!

Homemade Pancake Mix

This has become a staple recipe in our house. We make big batches of this mix and keep it in a container in the fridge so we always have it on hand. I've tried this with whole wheat flour, all purpose, and all purpose with ground flaxseed added, and it comes out geat every time. One note, I think these pancakes take a little longer to cook. I usually drop a 1/4 cupfull for each pancake, spread it around a little, and then keep the heat on med./low. Great recipe!

Homemade Banana Pudding Pie

Whoa- sorry, but this was no good.There was definitly something wrong with the sugar and flour measurements. It was way to sweet. My 8 year old son thought it was to sweet and dumped it out.Plus the pudding never set. I cooked it longer than than it was supposed to be cooked, but it was still watery. I've used the recipe on the Nilla wafer box before, and it came out great. It uses only 1/2 cup sugar, and 1/3 cup flour.I'll stick with that from now on

Banana Peanut Butter Bread

I made this on a snow day with hot chocolate, and it was so good!I made it with the changes everyone reccomends- 1 cup of peanut butter, semi sweet choco chip, more bananas, less flour ..etc. Plus I made it into muffins. It had a great banana peanut butter flavor and great texture. I propose someone posts this recipe with the changes-they make a big difference!

Applesauce Muffin Mix

This is a great muffin recipe if you happen to be out of milk like I was. A little bit denser than other mixes- next time I'll fill the cups with more batter.I subbed a Tbs of Brown sugar, and added a pinch of cardamom. Delicious!

Roast Sticky Chicken-Rotisserie Style

This is an awesome chicken recipe! I used one 4.5 pound chicken, instead of two.I'm only giving it four stars 'cause it was really spicy ! Next time I would cut the red pepper in half. But the chicken itself comes out moist and tender-Perfect!

Chewy Granola Bars

I made this with my kids, and we tossed in dried blueberries, cranberries and assorted nuts.They didn't taste like granola bars. More like bland oatmeal cookies. Probably wouldnt make again.
