Donut Muffins
Made a double batch of these last night, and I'm making another batch tonight. These were really good! The batter comes together quickly, and they bake up fast. I didn't get 24 from my batter- I got 17 on the first batch and 14 on the second (but my 8 y/o filled the pan on the second batch and overfilled them) I think the cinnamon sugar coating was a bit much at first-it was like getting a mouthful of sugar. But I put all the finished muffins in a large ziploc bag and took them on a picnic, and all the excess sugar fell off and they were perfect. Very cute, very yummy little muffins!

Moist Banana Muffins
These were soooo good. My kids loved them! I mixed the banana with the mayo and then added everything else. The only changes I made were to add cinnamon, and I used half a cup of brown sugar, and half a cup of white. I made 11 big, yummy muffins. They came out kind of crunchy-in-a good way on top, and moist inside. I'll definitely make these again!

Honey-Cocoa Frosting
I made this without the cocoa, using the 1/2 cup of honey, and using light cream cheese (neufchatel) to put on carrot cake muffins. I have to admit, just tasting the frosting by itself, I didn't care for it. It had a strong tangy flavor from the honey and cream cheese. BUT....it tasted really good with the muffins. I would make this again, it was easy to make, light, and I love that there's no refined sugar in it. Plus my kids liked it!
