Easy Red Beans and Rice

I have made this recipe a few times and we always love it - even my kids. I substitute a can of pinto beans and black beans instead of kidney bean (personal preference) and omit the green pepper. I didn't have flavored tomatoes so I just added a tsp of cajun seasoning.

Sweet Potato Pear Bake

I'm happy to be the first to rate this recipe....it is delicious! What an interesting (and slightly sweet) combination. I put a little extra cranberry sauce on it because I like that. It's a great way to get kids to eat fruit AND vegetables!

Lemon Cake

This has become one of our favorite cakes - it is outstanding! I used a lemon cake mix (the "supreme" kind) and it wasn't too lemon-y. It's hard to resist!

Chocolate Mint Cookies I

These are wonderful and really easy to make. On the recommendation of other reviewers, I added 1/2 tsp of peppermint extract and it adds a nice touch - especially for Christmas. I was worried about them being undercooked when I took them out after 10 minutes, but they were fine. Soft and chewy!

Eggplant Mixed Grill

This recipe name should be changed to "Veggie Mixed Grill" - it's a great marinade for any vegetables that you can grill. I used summer squash, zucchini, sweet onion, broccoli and red pepper and everyone loved it!

Double Crust Bean Pie

This was a nice, hearty meal. I took others' suggestions and added corn, garlic, omitted the green pepper and added extra salsa. If anything, I would increase the chili powder or add a bit of taco seasoning. I didn't have any sour cream but I think this would be even better topped with it.

BBQ Dry Rub

I used this on boneless baby back ribs and let it sit in the fridge for several hours, then grilled it. It was unbelievable! I pared the recipe to 6 servings and cut back a little on the pepper and paprika so my kids would eat it, too. This has tons of flavor!

Korean BBQ Beef (Pul-Kogi)

This was delicious! I didn't have rice wine so I used seasoned rice vinegar and it came out fine. I marinated it for about 3 1/2 hours, grilled it (so I didn't cut it really thin), and it was hard for everyone to stop eating it. I have two sons - 9 and 12 - and they both said it was the best "steak" they had ever had!
