Wild Rice Shrimp Bake

This recipe is quick, easy to make and very versatile. I used basamati rice and I'm sure you could use any kind of rice. I used pre-cooked, frozen shrimp, thawed. I heated the shrimp in coconut oil with onion, garlic and old bay seasoning. I added broccoli and I think that you could add any veggie that you prefer. I omitted the croutons and made half the amt of the recipe and used a sqare 2 qt. baking dish.

Chicken Fried Venison Steaks

This is definitely a filling winter weather meal! I used white/wheat flour in place of the cornmeal (using what I had on hand), I also used canola oil in place of the veg oil and used onion powder in place of the sliced onion (boyfriend won't touch onions!). The meal came out great and I would try again!

Baked Potato Skins

These were yummy! The only aspect missing from this recipe is what to do w/ the scooped out potato. In hindsight, I would make more of the oil/seasoning mix and add it to the scooped out bits of potato and bake it along side the skins. Additionally, I made minor modifications to this recipe: using canola oil in replace of the veg. oil and used plain yogurt in place of sour cream.

Cube Steak Parmigiana

I made this recipe using venison and using fine bread crumbs (instead of ritz crackers). It came out great! I was a little hesitant due to the fact that I've only had chicken parmigiana and wasn't quite sure what a red meat would taste like! I used jarred sauce and shredded mozzarella cheese.

Sausage Pasta

I thought this recipe was a good start but was just missing something! I used fresh tomatoes instead of canned and also used fresh spinach instead of frozen. Oh yeah, and fresh basil! I used a sweeter type of sausage and I think next time I will use a more italian & spicy sausage.

Zucchini Cobbler

This is not the zucchini cobbler/crisp that I remember from when I was a child! It was too thick and had way too much butter. The topping didn't get doughy or crispy..just mushy. I definitely think that the zucchini should not be mixed with some of the topping b/c it made it too thick! I will definitely be asking my mom for her recipe!

Banana and Vanilla Cupcakes with Buttercream Frosting

It's an ok starter recipe. I'm bummed b/c the cupcake stuck to the paper. The taste is a nice light banana flavor but could use some cinnamon! On a good note, they are very moist. I tried one without frosting and it was good that way. I will be frosting them later with a cream cheese frosting that I made a few days ago.

Oatmeal Pancakes

Used 1 percent milk instead of buttermilk. Added cinnamon, vanilla & ground flax seed. I thought the pancakes were very dense! I love pancakes and I love oatmeal but I'm not sold on the combination! The center definitely had an oatmeal texture, nothing like a pancake center!

Chocolate Chip Pumpkin Cookies

7 dozen?! No where near. Maybe 2 dozen! I will also use 1 more can of pumpkin, next time I make these! Needs more pumpkin flavor!! I doubled the cinnamon & nutmeg, added allspice, ground cloves & ginger (all a dash). I also substituted brown sugar for the white sugar and used about 1/2 the amount of sugar. My cookies didn't spread out like typical chocolate chip cookies do. Oh well! Not bad!

Tropical Shrimp Scampi

Too much pepper! The pepper over powers the flavors of the whole dish! I have now learned an important lesson, salt & pepper to taste! ...Never to what a recipe states!! I think otherwise this would be a fantastic recipe! I think it would go great with rice and maybe add some broccoli!
