Creamy Squash Casserole

we really liked it. i didn't have cream of chicken soup, so sub'd cream of mushroom, and only shredded one carrot instead of two b/c i was short on time, but we REALLY liked the savory taste of this casserole. sure to be on our table many times in the fall!

Thai Cucumber Salad

This was tasty, but a little saucy for me. I would cut the sugar and vinegar in half and you will have plenty of sauce. I also added out a half cup of red pepper for more color, and it reminded me of a cuke salad at our favorite Thai place . . . Yum! Two jalapeƱo peppers made it a bit too spicy for our kids, but was great heat for us!

Kerry's Beany Salad

oh yeah, this salad is AWESOME. i used brown rice and added a little more garlic and a dash of cumin as others had suggested. it's so good, i can't wait to serve it for a party tomorrow! I really think people will love it! :)

Mushroom Wild Rice Bake

THis recipe is a GREAT side dish! The only thing I didn't add was the sliced mushrooms as we aren't a mushroom family (for the texture, not taste). It took a little longer to make than I was anticipating (to get all liquid absorbed) so it was done AFTER we had eaten dinner, however our family sat around it after it came out of the oven and ate HALF. It was so good - even for picky toddlers! Will definitely make again, but this time serve it WITH dinner! :)

Black Bean Salsa

This was good but I added suggestions from several other readers. I only used 3 cans diced tomatoes (they weren't in season yet), 2 cloves crushed garlic, 1 lime, squeezed, 1/2 small chopped onion, 2-3 tablespoons cilantro (we love it!) and cumin and salt to taste. This definitely needs to sit overnight, but it is such a FRESH salsa - YUM!
