Indian Mustard Fish

Reviewed: Jul. 25, 2006
just to add that mustard being crushed in the bowl like that will be bitter always.originally people in bengal use a special grinder of a stone make to grind mustard to make mustard fish(bhappa ilish). add cumin powder also pls.just try grinding 3 tbs mustard with some 2 tbs peanuts and1/2 tbs(adjust salt later in the gravy) salt in a mixer,(can increase the content to help rotate the grinder, refigerate the leftover and use for a gravy paste to another one)it will not match the original taste but it will be not bitter, and who are allergic to peanuts they can use cashews instead.another method my mother-in-law do is ,she make dry mustard powder in bulk in a grinder about 7-8 tbs of mustard.(or enough to make rotate the grinder) and when the fish is done(steamed fish) add mustard powder+green chily paste+cumin powder+turmeric powder+bit of salt+red pepper powder+oil+water to make a smooth paste add at the end and cook for 5 mints .

its avery good recipe for health conscious people,i guess one can add milk instead of water ,and cook in milk only.while cooking can add 1 cardamom whole crushed, and imp its my moms secret, soak rice in water for say 1 hr to cook throughly, you wont feel that grainy thing.as told by another rewiewer..

Spicy Shrimp Creole

Reviewed: Aug. 21, 2006
thanks Pamela for sharing this recipe!! this is my first recipe for creole type. scaled it to 4 servings but added garlic 5 cloves instead of.Instead of canned tomatoes , i added 1/2 large fresh cut tomatoes, added 1 tsp of flour ,1 chopped green bell pepper, for hotness i added 1 tbs of indian red pepper , 1 jalapeno pepper (we prefer bit hot and spicy)and 1/2 cup of water for the gravy and lastly added 2-4 tbs of fresh cut cilantro .We served it over plain cooked rice.its a wonderful recipe !!!.

Spicy Chicken Curry

Reviewed: Aug. 25, 2006
Used 4 chicken legs instead of breast so cooking time varied , another 15-20 mints of cooking at low. scaled servings to 2, And found that the ingredients are low on spice(we prefer bit spicy and hot), so added 1 jalapeno pepper and more garlic , ginger and red pepper powder. Poppy seeds can not be made into paste as the quantity is much less , I would suggest making it paste with some cashews and increase the quantity to help rotate the grinder add 3-4 tbs of water also, thats the best way to do it . Refrigerate the leftover paste for any other gravy (stays fresh for 2-3 days), Its goes well with Mango Lassi as desert . Best made it with Canola oil , it will still be flavorful.lastly serve with chopped fresh corriander and onion slices.

Noodles Mexicana

Reviewed: Aug. 26, 2006
absolutely delecious !! happy to find mexican dish without cheese , scaled it to 4 servings and made some changes , added 4 cloves of garlic instead, 1 fresh tomato large, added 1/4 cup of frozen corn+1/4 cup of frozen peas instaed of canned ones , and 1 tbs of hot and spicy taco seasoning, 1 jalapeno for spice, but didnot add beef , so it was a vegetarians delight. made the egg noodles first and then added the prepared mixture gravy to the cooked noodles .lastly didnot had sour cream so thought of plain yogurt as a substitute. thanks for avery tasty recipe.
