Double Layer Pumpkin Cheesecake

I LOVED this recipe and it was so incredibly easy. The only things I changed: Used a little over 3/4 of a cup of pumpkin pie filling, but still used the spices. In the future, I may change the sugar to 2/3 of a cup. Delicious! It also took my oven a while to cook it. About 55 minutes, turned the oven off, opened the door, and let it sit for an hour.

Pierogi Casserole

This was okay. It could definitely use some improvements though. The first time, I chopped the bacon and cooked it as suggested. I had to toss it because it cooked so unevenly. It works much better to cook the bacon in strips, crumble, and return to the pan with the onion and garlic. Next time, I will definitely try adding sauerkraut to give it more flavor. Also, BE SURE to add salt. It desperately needs it.

Chocolate Covered Cherries

These were amazing and not that hard to make. HELPFUL HINT: I put a baking sheet in the freezer for about an hour before I made these, then took it out and covered it with aluminum foil. When you put the dipped cherries on them, they cool instantly and don't leave the bottom of the cherry without chocolate. PERFECT!

Chicken Milano

BBQ Chicken Pizza I

This was SO easy and so delicious. I used a Boboli pre-packaged pizza crust, and it turned out amazing. Next time, I'll definitely leave out the honey, as it was a little too sweet for me. Also, I used 1/2 mozz and 1/2 gouda as someone else suggested. Very nice!

Greek Chicken Pasta

WARNING: This is a HUGE amount of food. If I could give it 3.5 stars, I would. The flavor was good, but not over the top delicious. I used 1/2 box of pasta, and it was too much. I may make this again, but there would definitely have to be some changes.

Chicken and Cheese Stuffed Jumbo Shells

This is incredibly delicious. A few changes that I made: I cooked the onion (and added a few cloves of minced garlic) in oil in a saute pan for a couple minutes, added the chicken, which I had chopped very small, and allowed those ingredients to cook through. I then mixed together the egg and the bread crumbs, and added the cheese. I only used 1/2 a box of shells, and it was the perfect amount. Also, I used one can of Bertolli Tomato and Basil sauce along with one can of Del Monte chopped tomatoes (with basil and oregano), as opposed to the 29 oz. can of tomato sauce. This is definitely a keeper.

Artichoke and Sun-Dried Tomato Chicken

Would definitely give this 5 stars if I were rating it the way I made it. I didn't have any sun-dried tomatoes, so I skipped them. I used 2 cans of diced tomatoes, one that had zesty green chilis in it, used basil pesto instead of sun-dried tomato, and chopped up the artichokes in quarters. I added fresh herbs from my herb garden: thyme, basil, oregano and parsley. Served it over whole grain pasta and topped with mozzarella. I know it's a lot different than the recipe, but I used what I had. DELICIOUS!

Butterscotch Cake I

I LOVED this cake and I can't bake to save my life. A few tips - a lot of people mentioned that the chips fell to the bottom. Toss them in a little bit of flour before folding them into the batter and they will not fall. I made a cream cheese frosting (butter, vanilla, cream cheese and confetioners sugar), and it was DELICIOUS! This is a keeper.

Best Ever Jalapeno Poppers

These were UNBELIEVABLE! As others suggested, I blanched the peppers for 2 minutes. I used pepperjack cheese to increase the heat and it was PERFECT! Time consuming, but we froze about 40 of them. AWESOME!

Awesome Sausage, Apple and Cranberry Stuffing

This was UNBELIEVABLE! I am a vegetarian, so I made a couple of adjustments. I used a baguette that was freshly baked at the local grocery story, and ommited the liver. I used soy protein sausage (SO GOOD), and couldn't afford all of the fresh herbs, so I used some rosemary and thyme "icecubes" that I had made from my fresh herb plants this past summer. I did splurge and buy the fresh parsley. Since I didn't put it in the turkey, I used a little over a cup of veggie stock, popped it in a greased pan, and cooked it for an hour at 350. It came out PERFECT. The only change I would make for next time - break up the bread a little smaller and maybe add another apple. SO GOOD!!

Spicy Bean Salsa

I onl give it 4 of 5 stars because I made changes. I'm not a big fan of Italian dressing, so I used 6 tbsp. each of olive oil and lime juice, mixed with some chopped cilantro instead of the dressing. I added 3 cloves of chopped garlic, added 3 chopped tomatoes, a splash of red wine vinegar, and used diced tomatoes with chilis. I also added 1/2 tsp. of cumin, and it is PERFECT!! I will never again buy store salsa.

Banana-White Chocolate Pancakes

These were fabulous! The only reason I didn't give them 5 starts is because I tweaked it a little. I only used 1/2 of the chips and mashed the bananas. Still a LITTLE too sweet, I think I will only use quarter of the chips it calls for. GREAT!

Lentil Soup

This was okay. I made some changes and made some mental notes on how I would change it for next time. Because I am a vegetarian, I substituted the water with veggie broth, added more garlic, used only one tbsp. olive oil, and used one can Italian stewed tomatoes which I chopped up really small, and one can of crushed tomatoes. I used a whole box of frozen spinach since I love it and it is great for you. I also used the balsamic vinegar as others suggested. In the future, I will increase the amount of onions and garlic, as it was somewhat bland, and double the herbs.

Zucchini Cornbread Casserole

Boring. I added a can of corn, and there was nothing really to this at all. I dried the zucchini after I shredded them, and used Monty Jack on top and mixed in. Did not have much flavor at all.
