Chicken Pot Pie IX

I love chicken pot pies and was excited to make my first one - this was really good. Following suggestions, I baked for 45 minutes at 375 degrees and added garlic powder to the sauce. I added mushrooms and green peppers and left out the celery and carrots.

Sour Cream Mushroom Chicken

This is one of my favorite meals from home, but I've always just had it with one can of cream of mushroom mixed with 8 oz sour cream, poured over chicken and baked. This seemed like a good way to fancy it up. I scaled to three and going by the previous suggestion used one can cream of mushroom, 8 oz sour cream and 1/3 cup white wine. I think because I'm using cheap cooking wine, the wine taste was really overpowering. Next time I'll just a small splash. Other than that, it was really good. I served it over white rice.

Emily's Famous Onion Dip

Appreciated a healthier onion dip. Made 24 hours in advance for a dinner party and, though it was complimented by the guests, a lot was left over. I'm still eating it. You can't tell it's yogurt and it tastes almost like sour cream and onion. Maybe I'm too used to sour cream, but it just seemed to be missing something.

Dos Queso Dip

Halfed and made for a small dinner party and was disappointed to find it all eaten before I could get any. Made it again the next day and am determined to finish the whole thing myself. Put a layer of refried beans on the bottom and topped with extra pepper jack.

Deep Dish Brownies

Wanted to bring brownies to work - these were a big hit and gone before I left. As suggested, only used two eggs and left out the baking powder for a more fudgey brownie. So good I made them a few days later for my dad's birthday. For the first batch I sprinkled with a lot of chocolate chips before baking and that turned out really well. In the second batch, I melted chocolate chips on the stove top and spread them only icing. That was even better.

Very easy. I served these with Cajun Chicken, which I highly recommend. They did turn out mushy, but it wasn't that big of a deal to me. My boyfriend hates tomatoes, but he really liked the top crust. Next time I will make these for myself as a snack - but, with a lot more cheese.

Broccoli Beef I

Doubled the sauce and served over rice. Very good, but my sauce never thickened - added a tablespoon or so of cornstarch and that seemed to help a little. Also, used frozen broccoli, thawed briefly in hot water. Worked great.

Peachy Pork Chops

Angel Chicken Pasta

Following suggestions, I doubled the soup and cream cheese and cooked together in pan instead of baking. If I make it again, I won't change anything (excpet, maybe, to add fresh mushrooms). There seemed to be too much sauce and was almost too rich for me. My boyfriend said he liked it, but he only had one serving, which is unusual. He also suggested something besides angel hair. It will be awhile before I try this again.
