Venison Tenderloin Bites

FANTASTIC! Prepared exactly as the recipe outlined and it was delicious. We usually section off the loin, tenderize the meat and then bread and fry - this has a very similar flavor without all the hassle of frying - keeper, keeper, keeper! One thing to add, my oven has a LO and a HI broil setting, I prepared these on the LO setting and they came out perfect - 3 minutes per side.

Teri's Dinner in a Pumpkin

I originally reviewed this recipe in DEC 2009. I wanted to add some comments as I make this every year and just love it. - Rub the insides of the pumpkins with the pumpkin spice - Precook the pumpkins for 1/2 hour before stuffing and re-baking - Used ground turkey to skinny it up a bit - I agree with others that you should drain the meat before adding the spices otherwise they wash aways - for the same reason I think the rice should be cooked separately from the meat otherwise the chicken broth might wash away the spice on the meat. I usually cannot find a large pie pumpkin so I usually end up buying two medium size ones and the filling is enough for both... so I give one away and take the burden of cooking one meal away from a friend :)

Amazing Brown Rice Salad

I have made this recipe several times as it travels well for camping. Because you add the dressing while the rice is still hot I've found that the rice soaks it up and can leave the salad on the dry side. We always double the dressing recipe add half when preparing the salad and reserve half for adding after the salad has cooled.

Apple Oatmeal Crisp

This is very sweet. Next time I would add the cinnamon to the crumb mixture and skip the white sugar on top all together. Tasty but very sweet if you follow this recipe exactly.

Arangini (Italian Rice Balls)

Make these as an appetizer for a family birthday party (a big Italian family) and they loved them!!! Got asked for the recipe several times before leaving the party - only negative is they can taste a bit salty due to the ham.

Spicy Bean Salsa

This recipe has become a family staples at our summer cottage and on our boat, it travels really well and everyone loves it - including the kids which the parents said "no way will *** eat that" we couldn't keep them out of the stuff. The only adjustment I make to the recipe is to decrease the amount of dressing, it seems a little soupy with the entire cup in there.
