Sophie's Zucchini Bread

Tasty! I was looking for a recipe that used up as much zucchini as possible, and this fit the bill. The result is very moist and dense; we found it easier to eat with a fork, but picking it up isn't out of the question. The bread has a nice balance of flavors. I substituted 1c whole wheat flour for 1c of the all-purpose. I reduced overall sugar to 1 1/2 c and made 1c of that brown sugar. This was plenty sweet for us. I also substituted applesauce for 1/2c of the oil. Bread was still a little crispy around the edges, didn't have that gummy texture you sometimes get with applesauce substitution. Warm from the oven and spread with a little butter, this was delicious! Will be freezing one loaf for later, expect it to hold up well.

Brenda's Apple and Pomegranate Crisp

This was a simple and delicious dessert. My daughter says it was "like heaven!" We reduced the amount of sugar, but could probably have used even a bit less. Take into account the sweetness of the apples you're using. The pomegranate seeds were a tasty accompaniment to the apples, and the oats in the crust had a nubbiness that gave it a nice overall texture. YUM!

Pumpkin Bread VI

A very nicely textured bread, I liked the whole wheat flour in this recipe. It gave the bread a little nuttiness, but it was still moist. After reading other reviews I increased the spices in this recipe to a total of 1/2 t allspice, 1/2 t nutmeg, 1 t cinnamon, and 1/4 t cloves. The result was nicely flavored, but I think I will add a little more next time. Also, I needed the bread to cook quickly so I baked at 375 for 40 minutes and it was perfect. The 50-60 minute guideline was probably for a 350 oven.

Cheesy Baked Cauliflower II

Very tasty! I recommend cooking for a much shorter time...15 minutes in the oven at 375 is plenty if you like your veggies a bit on the firm side. I would think 30 min would make them mushy. Like others have suggested, I cut the amount of butter in half. I also sprinkled the top with seasoned bread crumbs. Yum!

Baby Spinach Salad with Tomato and Mozzarella

Tasty, fresh salad. Make sure you don't overdo the herbs. An attractive alternative to the beefsteak tomato slices is to halve cherry or grape tomatoes instead. Perfect with Italian entree, will make again.
