Mexican Soup

Very fast, easy and delicious. I did make a few changes. 1) I sautéed the onion and green peppers along with two large cloves of garlic in about a tablespoon of oil first 2) I didn't have stewed tomatoes so I used a can of diced tomatoes 3) I didn't have a can of chili peppers so I used a can of mild chili beans instead. The end result was a delicious and satisfying soup for a very cold Midwestern day.

Creamy Chicken and Wild Rice Soup

Such a great recipe! I first made it as written and it was delicious. The second time I tweaked it just a bit. I boiled my chicken for this recipe and used 2 cups of it's water instead of plain water. I also used regular milk instead of the heavy cream and it was just as rich and hearty.

Delicious Ham and Potato Soup

This was a great soup for a freezing winter night. I did make a few changes though, I just used 2 chicken bullion cubes and garlic salt to taste and cut the pepper in half. I noticed others commented that the soup wasn't thick enough, I think it's because the butter/flour and milk mixture needed to be thickened longer then 5 minutes(mine needed more like 10 minutes)

"Pantry Raid" Chicken Enchilada Casserole

My family really enjoyed this recipe. The only change I made was I added a can of creamed corn to the Jiffy corn mix before I topped the chicken. It made for a delicious and creamy crust.

Spectacular Marsala Glazed Carrots with Hazelnuts

I first made this recipe as written and found it to be a little too sweet. The second time I made it I used 1/4 cup of sugar and squeezed 1/2 an orange in the glaze instead and it was delicious. I am going to substitute slivered almonds and brown sugar in this recipe next time.
