Coconut Curry Tofu

Delicious recipe! Just the right amount of heat and flavor. Make it as written except I browned the tofu in a thin layer of oil over med-high heat prior to adding. So scrumptious.

Yum, yum, yum! Doubled it to have some to freeze. I doubled the amount of cinnamon called for. This is PERFECT, and so easy.

Cuban Beef Stew

Yuuuuuummm. Such a nice change from a typical beef stew. I added half a can of Goya black beans... this added a great different texture to the soup. I served it with rice and sweet plantains. This is definitely a "wow" recipe worthy of company. I plan on freezing all of my leftovers for a special treat on a rainy day!

Baked Honey Mustard Chicken

So delicious and so easy! I used slightly more honey than mustard because I prefer a little sweeter rather than tangier. I also used a smaller dish, and the chicken turned out so moist and delicious! The flavor is fantastic. A+!!

These were fabulous! I had no clue what to expect, but since I had all the ingredients on hand, I decided to try them.I reduced the sugar by a little, and I sprayed the pan TONS before baking, so I didn't have any trouble removing them. They are a little chewy on the inside, and a delicious egg custard on the inside. So delicious! And so easy! I will definitely be making these again, very soon. My mom said "These are the best things I've ever tasted!" Yum.

Pumpkin Cookies I

These are absolutely delicious! I used only 1/2 C butterscotch morsels, which was plenty. Great consistency, can't stop eating them! Also added chopped pecans, which were a great addition.
