Rita's Sweet Holiday Baked Ham

I have made this receipe for several years now, Christmas, Thanksgiving, potlucks... I do not change a thing with regards to the ingredients, except I throw in the juice from the pineapple too. I place the scored ham in my crock pot, put the pineapple rings and cherries on it and pour the prepared sauce over the ham and cook it for 6-7 hours. The end result tastes as great as it looks!

Grilled Chicken Breasts with Fresh Strawberry Salsa

We loved this recipe. I can hardly wait to make it again. Using fresh ingredients is the key. I’ve got mint in my garden and wow, it really added great flavor. Couldn’t find the Serrano chile so used jalapeno. I also used some chipotle powder in addition to the chili powder. And my husband is a big garlic fan who thinks you can never have enough garlic. I removed all of the seeds from the chiles, so it was not a hot dish; will probably leave some in for some more heat next time.

Autumn Spice Ham Steak

Quick and easy, this looks great on the table on my old oval platter. My guests always ask for the recipe. I get the butcher to cut a slice of honey ham 1” plus. I brown both sides and then put in the rest of the ingredients and simmer until the ham is ready to serve. The house smells wonderful! Thank you Lesley.

Asian Chicken Noodle Salad

Great recipe to play with! I substituted baby spinach for the bok choy, and pumpkin seeds instead of pine nuts. I also added a tablespoon of sesame seeds to the nuts and 1 tsp of sesame seed oil to the dressing which I poured on the hot noodle mixture immediately after taking it from the oven. I have also tried it with jumbo shrimp but like the chicken better. It’s a meal in itself and a favorite in our house! Thank you Xing Jin.
