Pasta with Tomatoes and White Beans

I loved it, but I always love recipes like this. My husband was a little skeptical (no meat!?!) but he did like it. It seemed a little dry, but still good.

Southwest Chicken

I chopped up the chicken into bite-sized chunks, added fresh cilantro, served with brown rice, and sprinkled with a mexican-blend cheese. It was awesome!

Guacamole

A little too much lime juice and a little too salty for my taste, but still good - and those things are a matter of preference and can be easily adjusted for next time! I'll also add a chopped jalapeno next time!

Baked Potato Soup

This soup had lots of flavor. I like that you add the bacon, cheese, sour cream, etc. while eating, rather than cooking it in with the soup.

Warm Dijon Potato Salad

Very good. I used balsamic vinegar, doubled the amount of sauce, and used onion pwd. instead of green onion since I didn't have any on hand. I also added some garlic powder and a dash of "Nature's Seasoning" which is like a celery salt, dill, garlic, salt and peppery kind of thing. The vinegar taste was a little overpowering, so next time I'll cut back a little on that, but I thought it was quite tasty and a quick side to make too, which is always a bonus!

Kona Chicken

I added garlic powder and ginger, thickened the juice with cornstarch to make a sauce to pour over the chicken which I sliced, and garnished with more chopped green onion. I served it over rice. Mine was a little overcooked, but that's my crockpot's fault, not the recipe's! Overall we liked it, although I wouldn't say it was one of our faves.

Chicken Tikka Masala

This was delightful! I took the advice of other reviewers on the salt issue and only added 1/2 tsp. every time salt was called for, rather than the obscene amount the recipe states. I served it over basmati rice and made naan to go with it. Yum.

Naan

Mmmmmmmm! I made my first attempt at Indian food last night and made this to go with tikki masala. I left out the garlic in the dough and mixed it with the melted butter. I used the George Foreman grill and it worked out fabulously!

Hamburger Steak with Onions and Gravy

I thought this was great! The meat turned out very moist and tender and the gravy was quite tasty over baked potatoes. I added a can of mushrooms in with the onions and let them cook for a few minutes before adding the flour, and substituted burgandy cooking wine for the sherry, as that's what I had on hand. Next time I'll stir in some milk or sour cream to the gravy just to see how it turns out.

Cheese Soup with Broccoli

I have a similar recipe from my Grandma that's one of my favorites, but decided to give this one a try to see if it was better. It was quite tasty, and cooking the veggies in the broth gave it great flavor. I added potatoes, and it needs WAY more than 1 cup of brocolli, but was overall quite good. If you are worried about the cheese curdling, melt it into your flour/milk mixture after it thickens and you have taken if off the heat - then just add to the soup!

Cherry Swirl Coffee Cake

Technically, I don't KNOW if it's a five-star recipe - I took it to a church breakfast and didn't get any. However, it looked and smelled fabulous, was terribly easy and quick to make, and I came home with an empty pan and a ton of compliments. So I assume it's quite tasty!

Winter Fruit Salad with Lemon Poppyseed Dressing

I made the dressing first and almost stopped to review this recipe as soon as it was done becasue the dressing alone makes this a 5-star recipe! This was SO good! My new favorite salad recipe. I used toasted pecans and left the peel on the apple for prettiness. I also used a spring greens salad mix and threw in some leftover spinach I had on hand. I also served the dressing on the side so I could keep the leftovers. You will end up with WAY more dressing than you need, so you might as well just double the salad ingredients - it's so good you'll want more anyway!

Quick Quiche

This was tasty and easy. I didn't pay attention to the pan size and ended up using my 8-in. pie plate instead. I increased the baking time by 10 minutes and it was perfect. Can't wait to try it again with other veggies and cheeses!

Magic Peanut Butter Middles

These are SO fabulous! I followed the recipe except for adding a couple of tablespoons of milk to my chocolate dough, as it was a little dry, and they turned out SO GOOD! I flattened the chocolate dough out in the palm of my hand, and since I wanted the chocolate dough to be even around the filling, I made the edges thinner than the middle because the edges ended up overlapping when I wrapped them around the peanut butter middle. I also rolled them in sugar and just flattened them slighty with my hand. So amazingly fabulous!

Pineapple Chicken Delight

Easy and yummy. My five-year-old loved it, which for me, is always a huge bonus. (So did my 11 month old, but she'll eat anything!) I thought the potatoes, which I sliced VERY thin, were just a TINY bit undercooked, and I didn't love them coated in BBQ sauce, so next time I might just do them separately or make some rice instead. But the flavor of this was quite tasty and the chicken was moist and delightful.

To Die For Blueberry Muffins

Delightful! I doubled the recipe and made 12 jumbo muffins (filling the muffin tins all the way to the top of the pan) and then 5 more regular sized muffins. They are beautiful and tasty and I love them! The struesel topping adds the perfect touch! Yum!

Black Beans and Rice

I made this as a side dish for tacos, and since it was so tasty, ended up using it as a filling for my tacos too! It was really good. I used roasted garlic tomato sauce and it ended up needing a little more juice so i threw in about a fourth cup of salsa too. I also added about 1/2 cup frozen corn, a teaspoon of cumin, and a little salt. I mixed the leftovers with my leftover taco meat and I'm excited to eat it for lunch today!
