Captain Crunch Chicken

Reviewed: Apr. 23, 2009
Okay guys I got it. This recipe rocks!!! I read some of the reviews on this recipe and the one thing I noticed is when people said that they had a problem making the captain crunch stick to the chicken. Well I solved it! On this site there is a recipe for oven fried chicken. the recipe calls for crushed ritz crackers and mayonaise, yes mayonaise. Well after cooking it I found that it really makes sense. Mayo is an oil and it helps the crushed crackers stick to the chicken. Well that is exactly what I did here. I crushed the captain crunch in a blender and coated the chicken (bone in)with the mayonaise and then coated it with the captain crunch and basically oven fried it like shake n bake for 45 min. and BAM! there you got it, captain crunch oven fried chicken. The flavor it incredible, if you choose to make this, do like me and get past the mayo, make it and enjoy it. Trust me your family will love this.

Ghirardelli® Classic White Chocolate Creme Brulee

Reviewed: Jan. 6, 2011
What a fantastic desert. Made this yesterday had some today and if you love chocolate your gonna love this rich and creamy brilliant desert. Use only the best heavy cream, ( land o lakes) organic heavy cream, and place a towel on the bottom of your roasting pan. fill with boiling water to the half way point of the ramekin. Great tip to get rid of those bubbles pour through a strainer before you pour into ramekins. If you still have a few bubbles use your brulee torch on em and they will disappear. if you dont have a brulee torch trust me buy one at bed bath and beyond. good luck.... :)

Prime Rib Roast

Reviewed: Dec. 25, 2008
I followed the recipe to the last letter. But I also tripled the marinade put my 14lb. rib roast in two 13 gallon trash bags, poured the marinade into the bag, tied bag and put in my extra fridge. I marinaded it for two days. used all of the marinade in my roasting pan so that it doesn't evaporate to fast. The end result was magnificent!Thank you for a superb recipe. My whole family loved it.

Cathy's Banana Bread

Reviewed: Aug. 19, 2011
This is a great recipe. Truly the best banana bread I've ever had. Very moist. Some breads I've had have been very dry, not this one. Tip: make sure you use very ripe bananas, make sure skins are dark not spotted. I used four. I also made a caramel glaze that I got from another recipe here. ( 6 table spoons of butter, 6 table spoons of brown sugar and 1 teaspoon if vanilla extract. Melt butter over medium heat, add sugar and vanilla. Stir till sugar disolves and bring to a boil. Lower heat and simmer for 3 minutes. Let cool for 5-10 minutes and pour over bread. YUM!!!!! Thank you for a great recipe......

Coconut Milk Flan

Reviewed: May 2, 2013
First of all follow the recipe... I made this and forgot to spray ramekins with Pam and also forgot to put foil over roasting pan. Pulled out after 45 minutes and surprisingly it was still delicious . But was frustrated that I didn't follow instructions so I made another batch this time following recipe and instructions to the letter. I also used a trick I do when I make Creme brûlée . I put a dish towel on the bottom of the roasting pan before I pour in the water bath. Well anyway the first batch was delicious but the second was outstanding!! It looked so perfect and when my daughter and her boyfriend came over the next day for lunch they were just amazed. Trust me just follow the recipe and the instructions and you will really enjoy this flan. Thank you for the recipe...

Irish Cream Creme Brulee

Reviewed: Jan. 1, 2011
Now this was incredible!!!!! What a great recipe. really important to follow the directions, especially when tempering. 3 tablespoons of the hot cream mixture at a time to the egg mixture and wisk at the same time. the creme brulee was so creamy and what an incredible flavor. I made 12 ramekins and our guests went crazy. They were really impressed when I pulled out my torch that I purchased at bed bath and beyond just for this dish. Used raw sugar to make the candy carmelized coating. Thank you for a truly incredible desert.

Chef John's Perfect Prime Rib

Reviewed: May 27, 2013
I was really nervous making this. First time I tried to make prime rib a few years ago using a thermometer I ruined a 143.00 rib roast. ( over cooked) so I watched Chef Johns video and printed out the recipe and proceeded to follow it to the letter. This was AMAZING!!!! I could not believe how great this was. My mother loved it. My daughter and her fiancé really enjoyed it too. Thank you so Much Chef John you've just gotten yourself another fan. I let the roast sit out for 6 hrs as suggested. And did the math for a roast that was 9.22 lbs. the hardest part was not opening the oven door. What a great way to make the perfect rib roast.. I did pull it out 15 min earlier because it was a big roast and was afraid if the bones got to hot might over cook. It was perfect. Pink moist and delicious. Also made the beef au jus from his other video. So easy and made me feel like a culinary king.. Thanks again Chef John...
