Gourmet Mushroom Risotto

Wow...amazing! ! Made a few changes only because of personal taste. I only used about half the amount of mushroom (kids) I love mushrooms! Used garlic in place of shallots. We don't drink so no wine in our home just used an extra 1/2 cup broth. This took more like 35 min...but so worth it. Actually pretty easy to make. I almost forgot I did use about 1 tablespoon less olive oil and 2 tablespoons less butter.

Famous No Coffee Pumpkin Latte

This was really good. I did add coffee to mine. I didn't have a problem with it being thick at all. I really whisked while warming to help make extra frothy. Think next time I'll add some pumpkin pie spice. I used skim milk but would be great with whole milk if you don't mind all the calories. Topped with whip topping and a caramel drizzle.

Morning Glory Muffins I

These are awesome! Made with whole wheat white flour, applesauce in place of oil, decreased sugar to 3/4 cup sugarin the raw. I also added 1/2 can of pureed garbanzo beans and a pear with the apple. I added the nuts into the mixture. I left out the raisins but only because I didn't have any. Will make these very often! !

Sarah's Applesauce

I made a double batch using 8 large McIntosh apples but reduced the water. I only used 1 cup not 1.5 if doing double. I ended up straining off 1/2 a cup of water before mashing my apples. It would have been way too runny!! I also added extra cinnamon and used 2 tablespoons of sugar in the raw in place of the white sugar. Only cooked for 15 mins and the apples were plenty tender! Very tasty. Sorry I tend to modify recipes on this site according to other reviews.

Baked Teriyaki Chicken

Yum the whole family loved this. I made two pans one with the thighs and one with chicken tenderloins. I doubled the sauce. I added about an extra half cup of sugar(brown sugar) fresh ground ginger and hot pepper flakes. We served with jasmine rice and broccoli. Will make again. Oh only cooked the tenderloins for 30 min.

Smothered Mexican Lasagna

Yum we loved this. Did make some changes though ricotta just seemed strange so left that out. I added refried beans and used rotel. Will make again. Maybe try black beans next time.

White Cheese Chicken Lasagna

When making this I decided to cut out some calories. I used low calorie cheeses also used 4 tablespoons olive oil in place of the 6 tablespoons of butter. I used shredded chicken breast that I slow cooked with garlic, basil and oregano. I only used 1 pack of spinach. I wish that I had more sauce as my lasagna was pretty dry. I will make again but with using my traditional alfredo sauce recipe but will try the low calorie cheese again. Oh also used 5 cloves of garlic but will use even more next time.

Lazygirl's Ground Turkey Stroganoff

This was really good. My 5 and 7 year old loved it as well. I used canola oil and also added 3 gloves of garlic. After browning the turkey I added a package of dry onion soup mix. Also used milk instead of water. I wanted to add some sour cream but realized I was out. I will make this again!

Quinoa and Black Beans

I didn't follow this recipe but used for inspiration. I used a quinoa package that I had on hand spices already included. With the onion and garlic I also added red yellow and orange peppers. To make it a complete meal I added some turkey sausage.

S'mores

These were delicious and a huge hit in my daughter's class. I reduced the butter and increased the graham crackers as others suggested. Also cooked the crust for 7 min before topping with marshmallows and chocolate. I did line my pan with tin foil and cooled for a couple hours before cutting. They turned out great.

Angel Chicken Pasta

Yum! Loved this dish but made a few changes. I used chicken broth instead of wine. 1 tablespoon of olive oil in place of the butter and I used low fat cream cheese. The sauce seemed a bit thick and salty so I added about 1/4 cup of water. Used 4 whole chicken breast and about after 30 min of cooking decided to turn up my oven to 350. We had plenty of extra sauce! Will make this again.

Stuffed Pepper Soup I

This was my first time making stuffed pepper soup. It was very good but made a few changes. I added 2 cloves of minced fresh garlic, a half chopped onion and added an extra half a pepper and a cup of water. Next time I will add even more green pepper as it did not have enough for my taste.

To Die For Blueberry Muffins

Yum! These muffins are delicious. The best bluberry muffin recipe I have ever used by far. They are a bit crispy on the outside and moist and fluffy on the inside, PERFECT! I made 4 batches for my daughters school, each batch made 9 BIG muffins. As far as the crumb topping goes I made 2 batches and that was plenty (half for each batch of muffins). I also used frozen blueberries not thawed and my muffins did not turn purple. Make sure not to over mix your muffins.
