Lebanese Chicken and Potatoes

I loved this dish. It was a great launching point for suggestions by others. I added 1t. of allspice and 1t. of cumin. I also halved the lemon juice for preference purposes. I dumped everything into a large bowl, pierced my chicken pieces and marinated it for about 1 1/2 hours. I placed the chicken into a 9x13 dish then added the potatoes to the bowl to cover with the marinade. I then dumped the potatoes and the marinade all on top of the chicken. I baked it at 425 for 40 min. and then at 500 for an additional 20. It was perfect! The chicken was really tender and the flavor was a nice change.

I only used shrimp and scallops in this because that is what I had. I am still giving 5 stars because the broth was so yummy and I am sure with the addition of the other 'fish' it would be just as good.

Jalapeno Poppers I

These were sooooooo delicious. Definitely use sharp cheddar. I used white cheddar. I also used homemade sour dough bread crumbs and I did leave a few seeds for heat. I made them two nights in a row because my hubby loved them!

Blueberry Crumb Bars

These are soooooo good. We have made them a number of times with all sorts of different berries. They are wonderful with vanilla ice cream! We did sub the shorting with butter, but other than that, we follow it exactly as written.

Chicken Fajita Melts

This was a great idea which I want to give credit. That being said, I made a few changes for personal preference. I used a fresh, fire roasted salsa on the the bread instead of tomato sauce. I too, toasted the bread first so it would not be soggy. I did not use a taco season packet...I used the Pollo Asada from Trader Joe's. I grilled the veggies and the chicken, layered them over the salsa and added Jack cheese. Broiled until cheese melted and topped with sour cream and avocado. It was DELICIOUS! And pretty too! Thanks again for the starting point...love that about allrecipes!

Banana Cake VI

This cake is fantastic! The unusual cooking method made those little rebellious hairs on the back of my neck stand up, but I decided to yield and give it a go! WOW! Am I glad I did. I made this for my daughters birthday cake and there was nothing left! The only thing I did different was to bake it in 2 9" rounds. I wanted a 'pretty' cake on a pedestal for her. Because of this I had to adjust the cooking time. Also if you do it this way, put a cookie sheet under your pans as it will spill over a bit. I think next time I will use 3 pans and make it really "pretty" :) I am going to make it for Sunday brunch we are having this weekend.

Pumpkin Gingerbread

This was fantastic! The top has the most wonderful little 'crunch' to it. Wonderful texture. I did not change a thing except for baking at 325 for about 1 hour 5 min. I will most definitely make this again.

Banana Crumb Muffins

There is nothing else I can say that hasn't already been said. These are fabulous. The topping really does make it special. I use all whole wheat pastry flour and sucanat (dehydrated cane juice) to make it closer to a 'whole food'. We make these all the time at our house.

Grilled Cheese Sandwich

I think we can all agree that grilled cheese is wonderful. However, I am finding myself LOL at all the people that have commented on GRILLED CHEESE!!! This really is along the lines of "how to boil water" and "how to bake a potato". Thanks for the laugh...I needed it.

Apple Crisp IV

If so many people are saying this is "dry", then why the great overall rating? I made this with Breaburn apples (4) and McIntosh apples (2)thinking the McIntosh's would make the crisp juicier. They didn't. It was still dry. I have made crisps many times that turn out great...this one is below and was very disappointing.

Ultimate Spicy Spud Soup

I have changed this a bit and the way I changed it gives it 5 stars, but as written I think it is a 4...just my humble opinion ;) I use 1/2 and 1/2 instead of the evaporated milk, I cut the the butter all together and I throw in a handful of crumbled bacon. I also use chicken stock instead of water to cover the potatoes when in the pot. Made this way it is delicious!!!

Sour Cream Pork Chops

I gave this 4 stars because it is a "good bones" recipe...it needs more seasoning based on ones personal preferences but it supplies a good starting point. As other reviewers have noted, the sauce is a bit bland as written, but it is easily tweaked to suit your tastes. I personally seasoned my chops with salt, pepper, and garlic when browning. I also added a wad of fresh tarragon to the sauce when I stirred in the sour cream. Any fresh herb will make this a very tasteful dish as well as 'pretty'. The sauce needed to be a bit thicker for my taste, so I added more flour to the sour cream.

These are yummy! The only thing I found to be a bit better was to use shortening instead of butter (I tried it both ways). They came out a bit flakier and 'lighter' with the shortening.

Thanksgiving Leftover Casserole

This turned out to be a great way to use leftovers. I took the advice of other reviewers and added to the sauce. I threw in some fresh tarragon and thyme as well as a tsp. of chicken bouillon. I also added a bit more flour to thicken the sauce. It was very good!

Sausage Breakfast Pizza

This was really good, but I had to give it only 4 stars because I changed it a bit...I used spicy Italian sausage, red onion, and chopped black olives. I also used 6 eggs. It was yummy!!!

Pam's Brown Sugar Meatloaf

"Excellent" was the comment my hubby made on this one. I don't prefer meatloaf but he really likes it. So I decided to try this recipe and I am so glad I did! The only thing I changed was that I used BBQ sauce instead of ketchup.

Greek Spinach Salad with Tortellini

I made this for lunch for 5 of my friends while we were away scrapbooking. WOW! They all loved it and I had to make more. The only thing I will do different is double the dressing. It is really good and I wanted to taste it all over the spinach as well as the tortellini. I have saved this to my recipe box. Thanks Pam...loving Cooknik too! :)
