Mincemeat Cookies

I made these at Christmas and they were excellent! I was looking for something else to do with mincemeat other than putting it in the same old pie or tarts. And the frosting is awesome! I have to admit I left a lot in the pan and just ate it myself! Yummy!

Mincemeat Crumb Bars

These are great - just like date squares only I don't like dates much so mincemeat is a nice change. The best part is the yummy oatmeal base and top!

Peanut Butter Squares

These are quite good - more like a brownie than a typical sweet square. Without frosting they remind me of a health bar with the peanut butter and oatmeal and not being overly sweet. If I feel like a sweeter treat I'll frost some of them. Thanks for the recipe!

Peanut Butter Squares

Creme Brulee III

I tried this mainly to get rid of three eggs I had sitting around, and didn't want to fiddle around separating them and wasting the whites! Turned out kind of runny and almost like really really loose scrambled egg. Maybe the heat was too high when it was on the stove. Tastes ok though and I'll eat it myself over fruit for dessert. Probably won't try making this again - it's too finicky (for me) to get it thickened without scrambling the eggs. I LOVE creme brulee but I'll leave it to the restaurants to make and have it as a treat when I go out for dinner!

Orange Muffins

These are very good muffins and I like them particularly because they're not too sweet! If a muffin is too sweet you might as well just eat a piece of cake! I don't like nuts so left them out and didn't bother with the topping either. Delicious and a good snack for morning coffee break. Thankyou!

Nanaimo Bars I

This is a great recipe. I live in Vancouver Canada so Nanaimo Bars are a staple around here especially at Christmas. I haven't made them in years though as the last time the base was too crumbly and fell apart. This recipe has just the right ratio of graham cracker crumbs so the base held together perfectly. And you can vary the middle layer with some flavoring - I used peppermint. Also used medium coconut instead of the longer kind which I don't like. I'm definitely holding on to this recipe!

Magic Cookie Bars II

Wow these are fabulous! I used to occasionally buy one but bought ones were never very good. Finally made them yesterday even though coconut and walnuts aren't my favorite. However, everything goes together so well in these bars that I'll put up with coconut and walnuts! I have made them for Christmas and hope they make it over to my sister's. Had a sample yesterday just to see how they turned out and they are absolutely delicious. Thought of using a smaller pan but glad I didn't. The graham cracker crust is a little thin but bars are quite sweet and rich and if the crust and toppings were too thick they'd be too over the top. Perfect as is. Thankyou so much for this recipe!

Boscobel Beach Ginger Cake

This was a big hit with my family! Excellent cake! Unfortunately I left it in the oven a tiny bit too long and it was a little dry so I made an orange custard sauce to go with it. Yummy!

Lemon Square Bars

Wow - these are FABULOUS! I'll never buy them again now that I can make them myself with this great recipe. The lemon is a perfect consistency and nice and tart and the crust is rich and delicious. I baked the crust a little too long (a habit of mine) so some of the bars were a little hard to get out of the pan. But didn't affect the taste! Yummy - thanks!!

M-M-M-M-M-M Mumbles

These are ok but I wouldn't go crazy over them. The bottom/topping was really dry so they're very crumbly and a bit messy to eat. I'll eat them myself but wouldn't serve to company.
