Cottage Cheese Chicken Enchiladas

Reviewed: May 17, 2006
I have made many 5 star recipes that I thought were very undeserving, however this one was excellent! I did make my own enchilada sauce, but the rest of the recipe stayed the same. It was absolutely terrific! Everyone in my family enjoyed it and we can't wait to have it again. It was very good reheated the next day as well! Thank you for a new edition to my recipe file!

Italian Meatball Sandwich Casserole

Reviewed: May 17, 2006
very good! I did double the meatballs and cut the mayo to 1/4 cup. The rest was the same. The bread was somewhat soggy, but not offensively. The heavy crust on the Italian bread stood up. All in all, everyone like this and I will definitely make it again. Tasted exactly like a meatball sub!

This was good, but really I don't know what all the fuss was about. It was really rather ordinary.

Fiesta Stuffed Peppers

Reviewed: Oct. 3, 2006
I don't know what the big deal is with these. They were okay but nothing to rave about. I made them exactly according to the recipe. I guess we prefer some sort of sauce over them. They were very dry. I did however enjoy the yellow peppers much better than the green. I will keep looking for a stuffed pepper recipe. Sorry.

Chicken Tetrazzini IV

Reviewed: Nov. 3, 2006
Very good! However I did make a few changes. I used 4 Tbsp. sherry and I think next time I will use 5. It was not at all boozy and it added a nice flavor. I also used Ezekiel 4:9 sprouted grain pasta linguine instead of regular spaghetti. That added a nice very subtle nutty flavor that we all enjoyed. I also used shitaki mushrooms that I sauteed in butter before adding to the casserole. It was wonderful! Thank you for a great recipe!

Rugelach

Reviewed: Dec. 9, 2006
Absolutely the best rugelach recipe that I have tried and I have tried a lot of them. Very easy to do in the food processor. I followed the recipe exactly. I chopped the walnuts and rasins in the processor also. The filling stayed put when rolling the cookie by simply pressing it onto the dough as the recipe stated. Most rugelach I have made leak all over the pan giving the cookie a burnt look on the bottom, but these did not do that. The flavor is wonderful! Definitely try this recipe! It is a gem!

White Chocolate Raspberry Cheesecake

Reviewed: Feb. 17, 2007
Awesome! Cheesecake is a favorite in our house so I make it frequently. This one was especially good. I did bake it for the full 60 minutes and it required a complete chill in the refrigerator for it to set. It looked beautiful and would be great to serve for guests.

Awesome and Easy Creamy Corn Casserole

Reviewed: Feb. 17, 2007
I really don't know what all the fuss is here. We thought there was way too much corn. It was okay, but I will definitely keep looking for the perfect cornbread recipe.

Jay's Signature Pizza Crust

Reviewed: Feb. 17, 2007
Great crust! We baked it on a pizza stone. It was a very thick crust. Light on the inside and crunchy on the outside. It rolled out very easy and had a wonderful taste. We have made it several times.

Beefy Baked Ravioli

Reviewed: Feb. 17, 2007
Pretty good. The sauce that I used was somewhat watery and slide off the raviolis. I will make it agian, but use a thicker sauce so that it will all hold together. It was a nice easy dinner.

Rice with Herbes de Provence

Reviewed: May 14, 2007
Amazing! Seemed too simple to be so good, but I tried it because of all the great reviews. I'm glad I did! I did use a mixture of short grain brown rice and a wild blend of gourment brown rice. I also added a good 3 Tbsp. butter. It was wonderful with Pleasant pork chops, also found on this site. Thank you for the recipe.

Grilled Tuna Teriyaki

Reviewed: Jul. 26, 2007
Very good! Nice mild flavor. I also did not have rice wine so I used half brown rice vinegar and half sherry which was fine. For best results use fresh not frozen tuna. It was the very best tuna I have every made! Thank you for the recipe.
