Soul Smothered Chicken

Absolutely fabulous! I wish I could give it 10 stars! I agree completely with others that said that for this recipe you MUST use bone-in, skin -on chicken. I would just not be the same without it. I followed the recipe pretty much as written, however I used quality ingredients. The chicken broth I used was homemade stock that was boiled on the stove for 3 days, yummm! Very, very flavorful! The rest of the ingredients were organic, some of which came from our garden. Oh, and I also added green beans and extra carrots and celery. I only put in a dash of cayenne (personal preference). I too was a little nervous about the 3 cups of onions, but you didn't even notice they were in there as noted by other reviewers. I also mixed a little olive oil with the butter so that it would not burn. I cut back on the butter just a tad to make up the difference. I buy 20-30 chickens a year from a local farmer so I am always looking for different ways to cook chicken. This recipe will be a standard in our house. Thank you so much Veronica for the recipe!

Oven Fried Parmesan Chicken

Very good! Followed the recipe exactly except I made my own bread crumbs. I baked it for an hour and the chicken was nice and crisp and juicy.

Peaches and Cream Pie II

Wow! This is good! I made changes to this recipe only to make it somewhat healthier. This is what I did. With the rust I omitted the Tbsp. sugar and used walnuts only because I could not find any pecans in my grocery store without the chemical BHT in them. Then I used 2 pkgs. cream cheese and added 2 cups REAL whipped cream with only 1/2 cup confectioners sugar. Yum! Now for the topping, I mixed 3/4 cup sugar with the 4 Tbsps. cornstarch and added 2 cups organic peach juice (not made from concentrate)instead of the water and cooked that until thick. Meanwhile I sprinkled 2 Tbsp plain Bernard Jensen gelatin over the remaining cup of peach juice to soften the gelatin. Then I poured the hot over the cold juice and added 6 large sliced peaches. I covered it and chilled it in the fridge. O man was this good!

Banana-Dulce de Leche Pie (Banana-Caramel Pie)

This was just okay. It was very runny and VERY sweet. Too sweet. I did boil the can for 3 hours and it was completely covered with water the whole time. I will not make this agian.

Buttery Rolls

Absolutely the best rolls I have ever made! I did let them rise for about a 1/2 hour or so and brushed them with butter. I did not heat the milk or use softened butter before putting into my bread machine. I baked them for the full 16 minutes. They were very light, buttery and fluffy. I will definitely be making these again.

Super-Delicious Zuppa Toscana

Don't see what is so thrilling about this soup. It was very thin. I added some cornstarch which helped a little. I used homemade chicken stock which also helped the flavor. All in all it was fairly boring which I anticipated looking at the list of ingredients. However due to the rave reviews I thought I would give it a try. I will not be making this again.

Indonesian Satay

Don't know what all the rave reviews are all about. The peanut sauce was terrible. The marinade for the chicken was just okay. I've had better. I wound up making plain shish-ka-bobs with the chicken with yellow peppers and onions.

Taco Bake II

This was not outstanding, but it was easy, quick and good. I did not drain the tomatoes and still added the water with the taco mix and I doubled the cheese. I will make this again.

Fall-Apart Pork Stew

Great! Even better the next day. Followed the recipe exactly except for I used navy beans because that's what I had and I used homemade beef stock. I also used boneless pork ribs instead of a roast. They were very very tender. The stew was quite spicy. My red pepper flakes were very fresh. My husband liked it's somewhat unusual flavor very much and wants me to make it again. (I think it was the cinnamon and nutmeg that he noted were unusual flavors in the stew.)

Strawberry Cobbler I

WOW! I wish I could give this more than 5 stars! My husband said, "This is definitely, hands down the best dessert you've ever made." and I have made a ton. I used a scant 1/2 c. sugar with a Tbsp. cornstarch. Next time I would use a little more cornstarch. I also added 2 cups of blueberries (which could be why I needed more cornstarch). I used 1 1/2 the ingredients for the topping (we like a lot of topping). This was fantastic! I can't wait to make it again. Yummm!

Mexican Chicken Corn Chowder

Excellent soup! Wonderful flavor! I used homemade chicken stock rather than the water and the bouillon. I also upped the cumin to 1 tsp. I used pepper Jack cheese which gave it an even greater zip. Also I didn't have any creamed corn so I used 1 can of drained regular corn. I also added some short grain brown and wild rice only because I only had a half pound of leftover chicken. The soup was superb!

Marinated Tuna Steak

Wonderful marinade! I make tuna often and will use this marinade over and over. My teenage son and my husband agreed that this recipe is a winner! The only thing I did different was to use dried oregeno because I didn't have fresh. I used Ahi tuna and look forward to using Hawaian Sushi grade next time.

Mound Bars

Great! I did not add the sugar to the graham cracker crust. I always wonder why the extra sugar when there is already sugar in the graham crumbs. Anyway, it was plenty sweet enough. I also, as suggested by another reviewer, spread the coconut on thop of the hot crust and then poured the condensed milk on top of that and it worked perfectly.

Easy Morning Glory Muffins

AMAZINGLY DELICIOUS! The recipe was perfect as is. I also added 1/2 cup crasins and used sucanat (1 cup) instead of white sugar. I shredded 2 very large carrots in the processor and used olive oil instead of vegetable oil. 12 muffins were in my oven for 28 minutes. YUMMMMM!!

Peanut Butter Pie I

GREAT! The only thing I changed was to use powdered sugar instead of white sugar. This is the same recipe (with the powdered sugar) that we used in our family restaurant and everyone loved it. My husband even took it to work with him to share with the guys.

Cream Corn Like No Other

Don't know what all the fuss is aobut this?? It was very bland and didn't thicken up as nicely as I would have liked. My husband and son each had one spoonful, and said they wouldn't have any more. I threw most of it away.

Pumpkin Pie Bread

Abolutely the most moist bread that we ever had! I cut the recipe in half for only one loaf, used olive oil instead of vegetable, the whole 15 oz. can of pumpkin, rapadura instead of white sugar (and reduced the sugar to 1 cup), added an extra 1/2 tsp. pumpkin pie spice and baked it for 70 minutes. When we tried it after it cooled, it was okay, but when we tried it after it had been in the fridge overnight, WOW! By far the most moist, flavorful pumpkin bread ever. Thank you Tanja for the recipe.

Streusel Coffee Cake

Absolutely delicious! I will be making this often! I baked it in a 13 by 9 pan for exactly 33 minutes. I reduced the sugar in the cake to 1/2 cup and used walnuts instead of pecans because that is all that I had. No need to double the crumbs, there were plenty, and the cake was very moist! Oh and I skipped the glaze altogether. Really no need for the extra sugar!
