Seven Layer Taco Dip

Reviewed: Apr. 12, 2008
Hit of the party! I put it in a 13 by 9 glass pan. Doubled the beans, used 1 1/2 pkg. taco seasoning, 1/3 of a yellow pepper, about 1/3 cup vadalia onion, romaine lettuce instead of iceburg and I left out the olives. Yummm!

Coconut Macaroon Brownies

Reviewed: Apr. 11, 2008
Excellent! I confess I used boxed browines and only used the filling which was wonderful. When I have more time I will make the browines from scratch.

Mrs. Sigg's Snickerdoodles

Reviewed: Apr. 9, 2008
Excellent! I did replace the shortening with butter because of the trans fats. Very soft. My son couldn't get enough of them.

Cinnamon Raisin Bread I

Reviewed: Mar. 27, 2008
Excellent! I cut the recipe into 1/3 for one loaf and made the dough in my bread machine. I put raisins in 1/2 for my husband and no raisins in the other half for my picky son. I just put the raisins on top of the cinnamon and sugar and rolled up the dough tightly. Between the three of us we just about devoured the whole loaf in one night. Can't wait to make it again. It was incredibly easy using the dough cylcle in the bread machine.

Mulligatawny Soup I

Reviewed: Mar. 19, 2008
Absolutely delicious! I did boil a small whole chicken for the broth and then I doubled the recipe adding a little more carrot, celery, chicken and rice. We like hearty soups! The flavor was superb! Oh, and I did not double the butter when I sauteed the veggys.

To Die For Blueberry Muffins

Reviewed: Mar. 15, 2008
Excellent! I used white sugar for the topping as the recipe states and the topping was nice and crunchy. I reduced the sugar in the batter to 2/3 cup and coated the blueberries in flour so they would not discolor the batter or drop to the bottom of the muffin. I made 6 jumbo muffins and baked them for 25 minutes. They were absolutely superb! And they looked beautiful!

Cheesecake Supreme

Reviewed: Mar. 8, 2008
Creamiest cheescake I have ever made. I did not add any sugar to the crust. Crumbs are sweet enough. And I used 1/2 cup butter. To the cheesecake batter I added 2 tsp. vanilla and used 1 1/4 c. maple syrup instead of whte sugar. (you could add a little more if you like it sweeter. We don't like it real sweet.) I used a 10" springform pan and baked it at 400 degrees for 10 min. then turned the oven down to 200 degrees and baked for 3 hours. Then I opened the oven door and left it in there until it cooled before I put it in the fridge. Wow! Was it creamy! We all loved it. Thanks for the recipe.

Fresh Cherry Crisp

Reviewed: Mar. 8, 2008
Great tasting cherry crisp! I did replace the white sugar with maple syrup to make in more healthy and I did not use the crisco again for health reasons. 1/2 cup butter was plenty for the topping. Thanks for the recipe.

Blackened Green Beans

Reviewed: Mar. 8, 2008
These are amazing! I did make a smaller batch for a family of four and they didn't take so long, maybe 45 min. This is the only way my husband and two sons will eat green beens. Great recipe! Thanks!

The Best Rolled Sugar Cookies

I have been baking sugar cookies for 30 years and I have to say these are ABSOLUTELY the BEST! I did reduce the sugar to 1 1/2 cups (personal preference) Very eary to roll out. Puffed up ever so slightly. Incrediblely soft on the inside.

This was wonderful! I did double the bacon and the sauce ingredients as suggested. I also added about a cup of onions and used apple cider vinegar. I did not use the celery seed (personal preference) And it was perfect!

New York Cheesecake III

Reviewed: Jan. 23, 2008
Awesome! The creamiest cheesecake I have ever made and I have made quite a few. Following others suggestions, I owe the creamines to the long baking time at a low heat. I baked it at 400 degrees for 10 min. then turned the temp. down to 200 degrees and finished baking it for 3 hours. Then I turned the oven off, cracked the door and cooled it in the oven before refrigerating. Also as suggested I added 2 tsp. vanilla to the cheesecake and for the crust I eliminated the sugar and used 1/2 c butter. I'm glad I did. I substituted maple syrup (and added an extra 1/8 c. flour) for the white sugar for health reasons and it was way too sweet for me. Next time I will only use 1 to 1 1/4 cup maple sugar. The creaminess was just amazing!

Pumpkin Pie Pudding

Reviewed: Nov. 10, 2007
Excellent! As others stated, it was done in about 3 1/2 hours. I replaced the evaporated milk for whole milk and reduced the sugar to 1/2 cup and it was plenty sweet. Also I used maple sugar rather than white sugar. I served it cold with whipped cream! Delicious!

Seafood Enchiladas

Reviewed: Nov. 7, 2007
Good, but personally I think it would be better with corn tortillas. My husband and son, however liked it just the way it was written. I did use the extra spices that were suggested in the reviews and I was glad I did. I think it would have been rather bland without them.
