Chicken With Mushrooms

GREAT comfort food! Sauteed the portabella mushrooms with an onion before adding to the dish. Breaded the pounded chicken breasts with salt, pepper and salt added to the bread crumbs. Doubled the chicken broth as I deglazed the pan so that I had enough broth for the rice that I served this with and then topped with mozzarella cheese at the end just to melt the cheese. Yumm!!

White Chocolate Chip Oatmeal Cookies

PERFECT cookie! Soft on the inside with a crispy outside. I reduced the serving size in half and only used sucanat for the 1 cup sugar. I also omitted the pecans (personal preference). The only thing I would do different next time is reduce the sugar to 1/2 - 3/4 cup for a half batch because the white chocolate chips are so sweet in and of themselves that the addition of a full cup of sugar made these overly sweet.

Tarragon Chicken and Rice Soup

The addition of tarragon and basil in the recipe was BRILLIANT!! I've been making chicken soup for 35 years and was really hesitant to add the basil. I had no problem adding the tarragon as I live it with chicken, but basil? I just wasn't so sure. Well, the combination of them both was INCREDIBLE to say the least! The only change I made was to make my own chicken stock and to use the meat from a whole chicken. I will never make another pot of chicken soup any other way. Thank you Rubyjewel for a SUPERB receipe!!

The Best Thai Coconut Soup

Very flavorful! I did forget to add the lime and I used green curry paste instead of red as that's what I had. I added 2 lb. of shrimp and I'm glad I did because even so, there was a lot of broth and not a lot of "stuff". I did add brown rice as well.

Oven Roasted Parmesan Potatoes

These are FANTASTIC! My family would eat them every night if I made them. I chunk up the potatoes in the morning and cover them with water until I'm ready to use them. It removes the starch from the potatoes and insures that the inside will be soft with a crunchy outside. After draining and dying them I put them in a gallon freezer bag and drizzled in the oil to coat, then dipped them in the parm. mixture. I lined the baking pan with parchment paper which made clean up a breeze! Started them out on 350 degrees and finished them on 400. They were AMAZING!!!

Brazilian Fish Stew

Awesome! I used haddock that I had skinned instead of the talapia and half the peppers. Used coconut oil instead of olive oil. Other than that I followed the recipe. I refrigerated the fish for several hours after coating with the spice mixture. Will definitely be making this again.

My husband loved these! Nice and moist! The only change I made was reducing the sugar (used sucanat) to 3/4 cup. I would reduce it to a 1/2 cup next time.

Good cookie! I decreased the sugar to 2/3s cup, increased the cinnamon to 1 tsp. the cloves to 1/4 tsp. and added 1/4 tsp. nutmeg, the zest of a whole organic orange and instead of the water added OJ .

Easy Teriyaki Chops

Great! The addition of the red wine vinegar tenderizes the pork. I used fresh garlic instead of the dried and for those of you using regular soy sauce, try tamari instead. It has the same great taste as soy, but not the extreme saltiness and it is much better for you than regular soy sauce. You can usually find it in the health food section of your local grocery store.

Rockin' Salsa

Awesome flavor! I did NOT use any sugar, used about 3 large cloves of garlic instead of garlic powder and added the juice of 1 lime. I also used apple cider vinegar instead of white. I did not use the variations of onions and peppers, just used what I had in my fridge and garden (medium hot peppers). I peeled most of the tomatoes and left some unpeeled. Next time I will not peel the majority because the lycopene is in the skin of the tomato! I chopped the tomatoes, peppers and onions in the processor so you didn't even notice the skins. I upped the cumin to 2 tsp. and omitted the cayenne since I used all moderately hot peppers. I cooked everything down until my likeness for the thickness and then processed in a water bath for 20-25 minutes.

Cream Puff Cake

This is my husband's favorite dessert! I confess it is AWESOME! I make my own pastry cream (using 4 1/2 c. milk) and whipped cream and I melt some milk chocolate chips with butter & cream for a layer under the filling and drizzled on top of the whipped cream. I've made this many times. It's always a hit wherever I take it.

Hot Tamale Pie

I found this to be a good meal for a change. Nothing I would rush to make again, however my son loved it. I used hot & sweet peppers from my garden instead of the poblanos and I decreased the chipotle pepper to 1/4 tsp. because I knew it would be too hot for my family. It was perfect and still had a kick. I also googled homemade Jiffy corn bread mix and used that instead of the box mix and I subbed the white sugar in the recipe for maple syrup (always looking for ways to make recipes healthier).

Easy Peanut Butter Bars

Great! Moist! Thick & chewy! Loved these! However, I did as others suggested put them in an 8x8 square glass pan and only baked them for 18 minutes to insure a moist bar. They were lightly browned around the edges when I removed them from the oven. I also do not use refined sugar so I used sucanat and reduced the amount to 1 cup. My only complaint was that they were still too sweet even after reducing the sugar, so next time I will use only 3/4 c. sugar and hope that will perfect an already great cookie bar! Contrary to other reviews I did not find these at all cake-like.

YUM!!!!! Guilt free healthy dessert! I subbed the 1/4 cup sugar for maple syrup and eliminated the sugar in the whipped cream and it was heavenly! My whole family loved it!

Italian Wedding Soup

Good! I for the most part stayed with the original recipe until it was finished. I thought it lacked depth of flavor so I added a large Tbsp. of fresh (frozen in olive oil) basil and 1 1/2 tsp. salt which produced a better fuller flavor. I did decrease the bread crumbs in the meatballs to about 1/3 cup and I added a wild rice mix instead of the pasta and finally I added more carrots and celery. Personally I prefer "Italian Sausage Soup with Tortellini" much better.
