Chicken With Mushrooms
GREAT comfort food! Sauteed the portabella mushrooms with an onion before adding to the dish. Breaded the pounded chicken breasts with salt, pepper and salt added to the bread crumbs. Doubled the chicken broth as I deglazed the pan so that I had enough broth for the rice that I served this with and then topped with mozzarella cheese at the end just to melt the cheese. Yumm!!

White Chocolate Chip Oatmeal Cookies
PERFECT cookie! Soft on the inside with a crispy outside. I reduced the serving size in half and only used sucanat for the 1 cup sugar. I also omitted the pecans (personal preference). The only thing I would do different next time is reduce the sugar to 1/2 - 3/4 cup for a half batch because the white chocolate chips are so sweet in and of themselves that the addition of a full cup of sugar made these overly sweet.

Tarragon Chicken and Rice Soup
The addition of tarragon and basil in the recipe was BRILLIANT!! I've been making chicken soup for 35 years and was really hesitant to add the basil. I had no problem adding the tarragon as I live it with chicken, but basil? I just wasn't so sure. Well, the combination of them both was INCREDIBLE to say the least! The only change I made was to make my own chicken stock and to use the meat from a whole chicken. I will never make another pot of chicken soup any other way. Thank you Rubyjewel for a SUPERB receipe!!
