Coconut Cheese Flan (Flan de Coco y Queso)

I have this flan in the oven right now. The batter tastes heavenly! I used coconut extract (1 Tablespoon) as I didn't have any coconut-flavored rum in the house, and didn't really want to face any stores on Christmas Eve. I also added 2 Tablespoons instead of 2 teaspoons of vanilla, simply because I like a really strong flavor. The only reason I gave 4 stars instead of 5, well 2 reasons actually, and I may come back and modify later, but the first is I haven't actually finished it or eaten it yet, but so far, by all accounts it is shaping up just beautifully! My ONLY problem is that the amount of flan mixture is much too much for my 9-inch round by 3.5-inch high baking dish, and I had to make a second batch of caramel and divide it into 2 separated flans....Maybe this is just my experience but the mixture filled my dish to the brim, and I was afraid of it being too thick, and spilling over, so I used a 2nd pan and divided the mixture to make 2 flans. :) Thanks for the recipe!

Molasses Sugar Cookies

I followed this recipe EXACTLY as written here and it was DELICIOUS! I made these for a bake sale at my church, and I had people calling me hours later to tell me how delicious they were! These will definitely be a permanent addition to my cookie repertoire! Thanks for a great recipe!

Classic Waffles

I received a waffle iron/griddle for my wedding 15 years ago. I used to make waffles every Saturday for my family, until my kitchen flooded and my griddle (being kept under the sink) was damaged due to being immersed in water. This was several years ago. I *finally* got a new waffle iron and was excited to make waffles again... I used this recipe based on the rating and the comments, but rather than make changes right off, I decided to do the recipe EXACTLY AS WRITTEN so that I would be able to do a fair review. I followed this recipe exactly as written, and the waffles were very crispy and fluffy and wonderful EXCEPT I found them to be TOO SALTY. So I could only give 4 stars. I imagine if one was to reduce the salt by about 1/2 it would be absolutely perfect, so all in all a really great waffle recipe!

Pantry-Raiding Chicken and Dumplings

Well, I forgot to put the 2 cans of condensed cream of mushroom soup in the ingredients which I DID USE...so I hope no one makes it without reading this first. OOPS..It was my first time posting a recipe, so I am really sorry. My kids who are usually really picky eaters all LOVED this, and ate up all the dumplings! (Except the 2 I snuck into a container for hubby's lunch tomorrow...). ALSO, I used a cookie scoop to drop the dumplings into the pot. They got to a little more than double their original size by the time they were done cooking. All in all, a very successful experiment here in our household. :)

Friendship Fruit Starter

I have been looking for this recipe for YEARS!!! In the '80s my grandmother and her circle of friends had these cakes going around and I loved it! She passed in 1998 and even though she gave me her recipe box before she died, there was nowhere to be found a recipe for the starter! I remembered more or less what it had but I couldn't remember how it worked or when you were to add what...THANK YOU SO MUCH for posting this recipe as I can FINALLY make these cakes for a whole new generation and culture!! :)

Spritz Cookies II

I actually made a sugar-free version of this cookie and it came out wonderful! I substituted a generic version of Splenda in the same quantity as the sugar listed in the recipe and I used 1 tsp almond extract and 2 tsp. vanilla for the flavorings...I really thought they were great. I have a small home-baking hobby and I have a lot of friends who love for me to do their baking for them...so this will be guinea-tested on some of my diabetic friends who have been feeling left out.
