Chicken Pot Pie IX

DO NOT cut corners by using frozen veggies! I did this after having made this recipe a few times fresh...yuck! I do reccommend adding some frozen country hash browns (cubed potatoes) for bulk and texture. I never have celery seed on hand so I just omit it and all is fine. Love the sauce in this recipe! I have probably made this 10 times already!

Sweet and Sour Chicken I

Great recipe! I have made this with and with out the breading/batter. My family preferred the breading but I liked it with out because of the time and calories that it saved. Remember to leave the peppers out until the last part of cooking....less soggy and a slight crisp!

Turkey Brine

Last year I used a granite-ware pot (the kind used for water bath canning) and put the turkey in with the brine on the bottom shelf of the fridge. Worked great!

Joey's Cheesecake

So far the filling tastes great...not done baking yet. I increased the sugar to 1 cup since I had to use plain yogurt. I have been looking for a plain cheesecake recipe that did not have sour cream (since I was out) in the recipe. This is going to be used as a layer in a "S'mores" cake. I'm only concerned about the consistancy and will be freezing it before making the cake.

I loved this recipe and the only thing I did different was add two tablespoons of granulated sugar after it was all mixed up. It had just the right texture!

Out of this World Turkey Brine

This was the first time I used a brine so I would not know if it was any better than another. I was so pleased with my turkey that I will use this again. I made my own vegetable broth and it made the house smell great. I think I will soak longer than overnight next time.

Country Pound Cake

Good flavor but it ended up burning on the top (bottom of bunt). I cut the burnt part off and it was a little crumbly. Not sure how to fix that...probaby will lower the temp. next time.

Pumpkin Crisp

I can never remember the name of this so I call it pumpkin stuff. I have made twice now and love it! The first time I made it, I mixed up the sugar and butter measurments for the crumble topping so I added a couple of tablespoons of flour and a couple of handfuls of oats....very good mistake! The next time, I kept the sugar and butter correct and only added a 1/4 cup of white sugar and 1/2 cup of brown sugar and added the oats....even better! Just add pinches of the gooey topping all over and bake as directed. Rave reviews!

Parmesan Chicken

I have never made parmesan chicken before so I was worried that my family wouldn't like it. Was I wrong! I got requests for more just a couple of days later! I could not find my bread crumbs so I put a couple of pieces of bread in the toaster and then chopped up with the food processor. I tried the oven at first but the bottom was soggy so I then put the chicken in a frying pan. To make smaller portions, I sliced and then put on top of angel hair pasta with marinara sauce. My husband requested mozzarella melted on top...I was trying to be a little healthier...shhhh!

Caramel Candies

Remember if you do not have a candy thermometer, use a glass of cold water to test the candy. If it dissolves it isn't ready. If it forms to soft ball and you can roll it with your fingers...ready. Hard crack is when it immediatly is stiff. Be careful, when you get close to the temp. to remove quickly. I have tried twice and it was hard the first time. Perfect the second time.

Red Velvet Cupcakes

I made this with the original recipe and was pleased. I do have to admit that the next day the cupcakes were a little dry but still yummy. I have never made this type of cake before and I plan on trying the custom recipe next!

Quick and Easy Pizza Crust

Was easy to make with ingredients in my pantry already. I added italian herbs and garlic to the mixture. Be careful to mix well so that you don't get clumps of crusty flour. I'm thinking that flour mixture should be added to the wet mixture an not the other way around. I doubled the recipe and then split it up to make personal pizzas that the kids made themselves. Turned out YUMMY! We also used a can of Hunt's spaghetti sauce that is sold for a dollar!

Libby's® Pumpkin Cheesecake

This was the first time I have made a home-made cheesecake and can say that it was amazing! I did not have enough time to do the sour cream topping and it still was really good. Next time I will use the sour cream to make it even better. I used the tip for leaving the pie in the oven for an hour after turning off the heat and it turned out with the right consistancy. I am saving this one to add to my favorites.
