Puff Pastry Salmon Bundles

I tried this recipe tonight, I only used 2 pieces of fish, so halved the pastry, but used the rest of recipe as written. We really enjoyed this and will do it again. As it is February and asparagus is 5 bucks a lb, I went with what I had which was spinach, turned out great. I will double the sauce next time tho, and thin it out a bit, it's really good but quite thick. This is a keeper recipe.

Chicken Biscuit Pie

Had some leftover chicken so thought give it a go. I used the same ingredients, but in different order, I cooked the onions, with part of the butter, added the veg shortly after and cooked it . Once cooked added rest of butter, put flour in and made a roux. Then added broth, and milk and meat. Added bit of parsley and pepper for bit of taste as well. Put it in casserole dish, I made top as per he recipe, but didn't do biscuits, I mixed it up, rolled it out and put a full top on it.......was really good. OH TURN DOWN THE HEAT. That has to be a typo, at that temp half will burn and other half raw. I cooked it at 375 for about 20-25 minutes and it was gorgeous.

Peach Whirligigs

I tried this tonight, and loved it. I used 7 peaches as mine were quite small. I had some peaches in the fridge that were horrible to eat, so thought try cooking them, they were worse peaches I have ever worked with, they were dry and hard and plain awful. But this recipe turned out great and peaches tasted fine. I used all brown sugar that was only change I made, will certainly use this again and will try with apples as well.

Chicken and Dumplings II

I used this recipe as a base recipe. I dont think personally that tomatoes and green peppers belong in a chicken and dumplings meal, so did not add them. I added a few more herbs as personal choice and it was really good, I find it easier however to cook the chicken first without any other ingrediant, then shred it, and put in the veg/herbs/ and anything else you want back into the liquid. I like a thicker base so did use flour to thicken it up a bit. I also used my own dumplings mix. For those having a problem with the dumpling going gooey or liquidy, make sure the fluid is piping hot! Cover the dumplings and try cooking for 15 mins, do not remove the lid or they will go flat!

Peanut Butter Bars I

As other have said keep refrigerated as they go real soft. These were nice but have sat for near a week in our fridge, so not a recipe I would prob do again. Took them to my grand daughters today for them, just to get them out of the fridge. The taste is nice but very rich.

McCormick® Cinnamon Caramel Swirl Bars

I made these yesterday and was not overly fussy. The caramel goes really hard after they cool. I used baking caramel bits instead of square caramels, but that shouldn't make difference. I made no changes. Not something I will prob make again..

Delicious Raspberry Oatmeal Cookie Bars

I made these the other day, only change I made was I had fruit in freezer I wanted to use up, so I thickened up my own raspberries and used that instead of jam, I really liked this recipe and will do it again, but I do prefer my squares a bit thicker...that is my only complaint on this recipe. I think next time will double the base and maybe try something other then raspberry, as I'm sure whatever fruit you use these will be really good.

Blueberry Pinwheels

I tried this recipe today 1. Prep time is for mixing only, does not include rising time, add 3 hrs 2. 10 oz is 1 1/4 cups 3. Use brown sugar in filling as it is nicer. I also have a warming option in my oven so I used that to raise the dough, blind sight quicker then waiting hour and half. I did same thing on 2nd rise as well, but don't do what I did, I forgot to put a wet towel on them and the tops went a bit dry, but didn't really effect the finished product. I did get 24, but think will make them a bit larger next time and either do 18 or 12. Someone said to thaw the frozen berries before putting them in as it won't rise.....not so...mine rose fine with frozen berries an they didn't bleed all over, or fall out of the dough either. It made the dough easier to cut actually as they were not mushy. This is a nice alternative to cinnamon rolls, but think next time will double the filling....my personal choice.

Whole Grain Pancakes

I did these for breakfast this morning. I must have done something wrong as the batter was like water. I changed nothing, after cooking about half the batter and having problems flipping them, I added more flour, they then of course thickened and cook up very nicely. Even the "I don't like healthy food" crowd ate them and up and liked them. I like the idea of having pancakes with some healthy ideas but if I do these again I will double the flour.

Peanut Butter Bars

I have made these 3 or 4 times and can't keep them in the house. I made a booboo and misread the recipe and added choc chips and pb chips to the batter, turned out great. I didn't use the icing, I just melted some pb chips and semi sweet chips and tbsp of crisco and drizzled it over the top, yummy

I read reviews on this before starting so I did double the sauce. I used 2.5 tbsp of both butter and flour, then added 2 cups of milk. Then added it to 2 egg yolks. DO NOT throw out the whites, you can whisk it and then add it to the sauce it makes if lighter. I didn't add parmesan to sauce either I put it on top with a bit of nutmeg. I have to say I will use less pasta next time and more tomatoes this was dry and it needs more herbs as well. Neither my husband were really fussy on this and we both love greek food. Maybe with a few changes this might be a 5 star in our house.

Raspberry Cream Muffins

These were gorgeous! I have been making muffins of all kinds for years, and this is brilliant recipe. I made 6 texas size muffins and boy did they raise so nice, just like you buy in fancy bakeries. My granddaughters are picky eaters (5, 3, 1) and they scarfed down a muffin almost straight from oven, wanting more. I stuck to recipe only changing from white chocolate (yuck) to a few semi sweet chips, not as much as recipe called for. For those complaining about the berries bleeding into the batter, take your berries put them on a cookie sheet and put in freezer until frozen(if using fresh berries) before adding into batter. I have no bleeding at all. Girls and I will be making more of these tomorrow...(according to them). Also going to exchange apple sauce for the butter, to help cut calories... EDIT: I made these again this am, to cut a few calories I used 2% milk instead of cream and apple sauce in replace of butter. The batter is still very thick but maybe a bit more stirable. It did not change the taste at all. So if you still want taste and cut over 1/3 of the calories just sub a couple ingrediants.
