About this Cook
I am 24, and have been cooking for as long as I can remember. My challenge now is to scale back from cooking for a family of 6 (or 5 roommates!) and master cooking one serving at a time. I'm also very health-conscious and love modifying rich dishes into healthy ones, and finding new ways to cook my newly-discovered love - vegetables! I'll never give up the cheesecake and cookies; now they're just made with neufchatel, whole grains and applesauce. :)
My favorite things to cook
As much as I love new, creative recipes, I think I get the most joy out of the comfort foods. My boyfriend raved for days over my meatloaf, and a friend begs me constantly for chicken and dumplings after I made it for a dinner party. Being relatively new to living on our own, I love giving my friends a reminiscent taste of home.
My favorite family cooking traditions
My dad did a lot of the cooking when I was growing up, and I loved helping him out in the kitchen. His recipes are famous in our family; I felt so honored to get to dump the raisins in the stuffing or choose which nuts went in that batch of Christmas fudge.
My cooking tragedies
At 17, I learned the hard way that if you over-whip cream, you get butter. I was so proud of the prospect of beautiful mounds of fresh whipped cream topping my made-from-scratch caramel-pecan pie, and subsequently devastated when I had to make a last-minute switch to Cool Wip. I'll never make that mistake again!

Light and Fluffy Spinach Quiche
Delicious! I reduced the mayo since I just didn't have enough for my double batch. Probably had about 1/3 cup, then filled the rest of the way with milk. Added some seasoned salt/pepper too. Made one with leftover Thanksgiving turkey, spinach and asiago, and a plain co-jack version for the picky eaters. Both got rave reviews! Think post-Thanksgiving brunch will have to be a new tradition now!

Dark Chocolate Cake I
hands down, best cake ever. I made a layer cake the other night, and cupcakes tonight (baked 16 minutes at 350) and they were absolutely fantastic. moist and fluffy, could have gone without frosting (but obviously that's no fun). this will be my new stand-by chocolate cake, replacing Elizabeth's Extreme Chocolate Lover's Cake from this site. that one's also superb, but this one is just as good, if not better, with fewer, more readily-available ingredients (in my kitchen, anyway. I don't keep sour cream around, and I hate using 6 of the 8 squares of chocolate in a box). make this cake. lick the bowl. then don't share it.

Mango, Orange, Grapefruit, Avocado, and Pistachio Salad
ohh this was so good! I had to skip the blue cheese and pistachios since I didn't have any but I can only imagine how much more awesome this would be with them. I made my own dressing with balsamic vinegar, olive oil and a little honey, plus sprinkled the whole salad with lemon juice, salt and pepper. I used fresh field greens and arugula instead of romaine for extra nutritional punch. this is a definite keeper!
