Artichoke Chicken Casserole

African Peanut Soup

I followed this recipe exactly and it was very good. It just lacked spice, we added a little hot sauce and it was perfect. I also added the rice at the begining because my package says it takes 45 minutes to cook.

Lentil Soup

This was very good. I threw in an extra 1/2 cup of lentils so I could use up the bag. This made it super thick so I added in some extra wine (so I could finish the bottle)and water so it was a better consistancy.

Easy OREO Truffles

Delicious!! I used semi sweet chocolate chips instead of the bakers bar because they were cheaper, they worked great. I can’t wait to try with peanut butter and mint Oreos.

Hearts of Palm and Spinach Salad

I made a 1/2 recipe and went a little light on the spinach, I used about 1/2 the dressing, we like it light. I also only used 1/2 the amount of sugar like other reviewers suggested which was perfect. I topped the salad with fresh bacon bits and I sauteed the mushrooms in a little bacon grease and white wine and threw them on top warm just before serving, it made kind of a wilted spinach salad. We just don't care much for raw mushrooms.

Grilled Pineapple

This sauce was good but grilled pineapple is so good on it's own I don't feel like this sauce did that much for it besides adding fat and calories.

New Red Potato Salad

This was fantastic. I left out the hard boiled egg since I'm not a fan and used water instead of milk since we were having a dairy free guest. I made this a day ahead and it tasted great!

Waikiki Meatballs

I totally cheated and used a bag of trader joes turkey meatballs and I still think this is a 5 star recipe. I just added some fresh Ginger to the sauce since it isn't in the meatballs. I also used an entire green pepper. Next time I would reduce the sugar some, it was a little too sweet for us.

Fudge Puddles

So I was a little worried when I ate the first one, it was warm and gooey but the texture was a little off. But then I had one in the morning and the chocolate had "set up" and it was fantastic! I had a little extra chocolate but not too much, probably enough for 3 more. I made the wells really deep using a wine cork, I just don't think a melon baller would have done the trick. I topped with chopped peanuts since I already had them on hand. I melted the chocolate in a pyrex in the microwave. I did it in 10 second incraments to keep it from burning while the cookies were cooling. It doesn't need to get hot, just melted.

Slow-Cooker Chicken Tortilla Soup

Great! I threw 2 BLSL breasts in frozen and just pulled them out and shredded them near the end. Worked great! I also used the enchilada sauce that you mix with tomato sauce and water since that's where most of the flavor comes from and I know we like it. It made 16oz instead of 10 or 14 so I just reduced the water in the recipe to make up for the extra liquid. Also the corn came in a 16oz bag so I went ahead and threw it all in. I will make this often.

Salsa Chicken Rice Casserole

I made a 1/2 recipe in an 8x8 pan which I think still would have served 6 although i did use 2 huge chicken breasts. I threw the frozen breasts in the crockpot with chicken broth in the morning so it would be ready to go when I got home. I should have cooked the rice ahead of time too. I thought this was great how it was, my husband prefered it with crushed tortilla chips and hot sauce on top.

Best-Ever Texas Caviar

Loved this, works great as a dip, side dish or taco topping. I used black eyed peas instead of pinto beans and added a little salt and pepper to the dressing. My jalepeno was a little mild, next time I'd use two.

Pumpkin Turkey Chili

This was very good - I threw in some red pepper, a can of black beans and a can of green chilis. I thought it was a little bland. Nextime I plan to add a jalepeno to spice it up.
