Fresh Raspberry Balsamic Vinaigrette

This is a fabulous recipe and most of the time I make it as written with one or two exceptions. Instead of just balsamic vinegar, I use a good raspberry balsamic. Gives it added raspberry flavor. And when I do this, I omit the honey, as you don't need the added sweetness when using a high end balsamic. I have also used almond oil instead of olive oil, or a combination of the two. I have even, on occasion, added a tablespoon or two of toasted sesame oil. Gives it a nice toasty flavor. Thank you mommy2two, for a great recipe as is or to start from for little tweaks.

Chocolate-Cream cheese Phyllo Triangles

Don't know if I should even rate this recipe, as I changed so many things. Used cream cheese instead of mascarpone, brown sugar instead of honey, coconut instead of nuts and only 1 heaping teaspoon instead of what the recipe called for. With this mix, I had almost no leakage and I did love the flavor of this. Lovely, light and tasty!!

Chocolate-Mascarpone Phyllo Triangles

Don't know if I should even rate this recipe, as I changed so many things. Used cream cheese instead of mascarpone, brown sugar instead of honey, coconut instead of nuts and only 1 heaping teaspoon instead of what the recipe called for. With this mix, I had almost no leakage and I did love the flavor of this. Lovely, light and tasty!!

Paleo Jelly Donut Cupcakes

This is an amazing recipe. I knew that coconut flour was good, but this proved it all over again. I found that the recipe barely made 10 medium sized cupcakes and I used apricot jam instead of raspberry, but it would be good with any flavor jam or jelly. My rating is on flavor. Next time I will double the recipe, they were that tasty.

Simple Savory Quinoa

So far, I have not been a huge fan of quinoa, but this recipe might change my mind. It is easy to prepare and quite tasty. I have to admit that I did not use turmeric because I did not have any in the house, but I used curry instead and it is very tasty. I will try this again with the turmeric and who knows what other variations I can come up with.

Cappuccino Muffins

Moist, delightful muffin. I think next time I will add a bit more instant coffee to give it a little more cappuccino flavor, and you could cut down on the butter a bit. But it is great just the way it is, too.

Cranberry Upside-Down Coffee Cake

This is an amazing coffee cake recipe. I just loved the tangyness of the cranberries next to the sweetness of the cake. I baked this in a springform pan, but next time I am going to try an angel food pan or a bundt pan. I think this will help the centre bake a bit quicker. Will let you know.

Broccoli Cheese Soup

Very tasty and simple soup recipe. Reduce the cornstarch to 2-3 tablespoons......just enought to get the desired thickness. I don't like "puddingy" soups so used the lesser amount.

Quick Gnocchi

They turned out quite well, but the three star rating is because they were fairly bland. I imagine the flavor is supposed to come from the sauce. I will try them again and the next time will add a bit more spice. More pepper, a bit more salt and maybe some garlic powder as well.

Banana Crumb Muffins

Wonderful, moist muffins. Just right amount of banana taste, not too much and not too little. The crumb topping adds just the right bit of pizzazz to take this muffin from ordinary, to slightly sassy.

Dipped Peanut Butter Logs

Coconut is not my favorite, but it is a favorite of my husband, and he loves these. I did not have to chill at all, but could form the logs as soon as everything was mixed with my KitchenAid machine. Good recipe.

This is absolutely yummy and so addictive. I am not a fan of marshmallow in candy, but this one is wonderful. Everyone that has received this as a gift or tasted it, wants the recipe. If I could give it more stars, I would.

Absolutely the best blueberry muffin recipe I have ever tasted. Rich and moist and delicious. The only thing I would change is add extra blueberries...at least a 1/2 cup more.
