Spinach Stuffed Chicken Breast
This tasted great, but I couldn't get it to roll well. If I do it again, I'll use the review advice to wilt spinach in bacon grease (as I did this time) but I'd layer it with half-cooked brown rice on the bottom, then chicken, then spinach mixture, and bacon on top as more of a casserole.
