Tiny Pecan Tarts

I listened to other reviewers. 1) I halved the recipe for the filling, but kept the full amounts of the vanilla and pecans. 2) To prevent sticking, I sprayed a shot of PAM into the bottom of each cup before adding pastry. And after cooking used a sharp knife to cut around each cup before popping out. Each popped out easily. 3) To fill each cup with pastry, I cut pastry into 1/2 and kept cutting pieces by 1/2 into 48 pieces. I rolled each piece 3) I was careful not to fill each cup no more than 2/3 full, because the filling expands.into a ball with my hands. Pressed it into a cup with my thumb shaping it into a well. Pressed with my fingers up the sides up passed the top. 4) I was careful not to fill each cup no more than 2/3 with filling, because the filling expands.

Tarragon Lover's Scallops

I sauteed the scallops in olive oil only. I added the water (instead of wine) and scraped up the bits on bottom of pan, and then added the butter. Made a wonderful tarragon butter sauce. Added scallops back into pan right before serving to serve warm.

Chocolate Chocolate Chip Cookies I

I wanted to share a modification to this recipe that turned out heavenly. I used 2 cups chocolate covered raisins from Bristol Farms instead of chocolate chips. And no nuts. It's what I had on hand. Wow! I loved the cookies and didn't want to share (but I did). Moist, chocolate rich cookies. I looked, and the ingredients on the chocolate covered raisins included chocolate liquor and chocolate butter. I will definitely make these again!

Blueberry Muffins II

These were my first attempt at baking muffins. It was so exciting. It was uneventful with delicious, beautiful, wonderful smelling muffins in the end. I used other reviewers' advice. I used paper liners and generously greased the tops of the muffin pan to prevent sticking. Thank you for the recipe!

tuna melt

With all the butter spread on the bread and cheese, there is no need to butter the pan, and the sandwitch is so filling and satisfying. And the pickle relish is optional, only to taste depending on my mood. I've tried many cheeses in many forms, and Tillamook sliced cheddar cheese is still my first choice. If you have cats, get canned tuna in it's juice (not oil) so you can give the juice to him as a surprise treat.

Thai Pineapple Chicken Curry

Awesome recipe. Will definitely recommend it. I substituted chicken for extra firm tofu. We have vegetarians in the family. 2 cups of rice is WAY too much. I'll try 1 cup next time.

Holiday Chicken Salad

Loved it! The basics of this recipe was the perfect use for my chicken holiday left-overs. I did substituted raisins for cranberries, because I did not have any. I also left out the green onion, bell pepper, and celery. The chicken, pecans, and raisin combination was a memorable combination which I will remember in the future.

Spicy Vegan Potato Curry

I liked the vegetables in the recipe. I did also add carrots. I liked the flavor of the spices, but they were too strong for me. Maybe I'll try adding less next time or some yogurt?

Brown Sugar Meatloaf

FOR VEGETARIANS: Since I was successful in adapting this recipe, I wanted to share my hints. My vegetarian boyfriend could not remember the last time he had had meatloaf. He LOVED it! I am not a vegetarian, and I thought turned out pretty close to the original recipe :-) I substituted 1 1/2 packages veggie crumbles (each 12oz package = 16 ground beef) for the ground beef. I am familiar with Morning Star Grillers Vegetable Crumbles and they worked well. I browned the veggie crumbles in vegetable oil until they were crispy and oily, giving them the texture of hamburger. Otherwise they may have become mushy. I also greased the sides of the pan well to prevent sticking.

Black Bean and Salsa Soup

Omitted the cumin. Added minced garlic, fresh lime juice, and a fresh jalapeno. Blended all ingredients reserving 1/2 of the black beans to add at the end for texture. Served the sour cream on the table with the soup.

Creamy Tomato Soup

Awesome comfort food. I make it when I am very tired, hungry, and want something a little decadent. I half the recipe into a microwave-safe bowl. I only include the garlic powder, milk, paprika, fresh basal, canned tomatoes, and cream cheese. I did have to wisk it to spread out the cream cheese and help it melt. But I just finished making it for the third time and it was so satisfying.
