Banana Banana Bread

Pretty good, I sprinkled walnuts on the top and that was yummy when they toasted in the oven. My roommate thinks it is too sugary, and I tend to agree. But it is pretty good, nonetheless.

German Chocolate Cake Frosting II

Extremely rich! My daughter who doesn't usually eat coconut loved this icing on chocolate cupcakes. I can only eat a very little at a time though.

Chicken Parmigiana

This is a good recipe, but it relies a lot on what kind of spagetti sauce you choose. I recommend a fairly sweet sauce, so that the cheese and chicken don't get over salted.

Chicken Enchiladas I

These were great! I used corn tortillas and salsa instead of tomato sauce. Also, I had about two cups of filling leftover that I added one cup of chicken broth and one cup of fat free milk to make a wonderful tortilla soup.

Portofino Lamb and Artichoke Risotto

I left out the artichoke hearts (mostly because my kids saw me cutting them up and started whining) and served it with "Lamb Chops with Balsalmic Reduction" from this site and steamed green beans. It was very pretty, and the balsalmic reduction perfectly suited the risotto as a contrast. Next time I'll do it in a non-stick pan!

Wonderful! I couldn't wait long enough for it to reduce too much, so it was kind of runny...the consistency of au jous, and it still tasted delicious. Served with steamed green beans and artichoke risotto.

Sausage Broccoli Chowder

This is really nice. Not what I expected, the sausage adds and interesting flavor. The large amount of cream is needed to dillute the spicy flavor of the sausage. I used low-fat milk instead, and it was fine, just thinner. To get it thick again, just cook on low heat uncovered for a while (half an hour-ish).
