Pasta al Mediterraneo

This was a good, easy, easy to clean up dinner! It's not so excellent that I would serve it to guests, but my husband ate second helpings and my 4yo and 2yo cleaned their plates. Success!

Authentic Louisiana Red Beans and Rice

Tomato and Bread Soup

This is a really nice base. I felt like it was missing something for a full meal, so I added two and a half sweet Italian chicken sausages, and it was a nice weekday dinner.

Dandelion Pesto

I just made this a few minutes ago, and I'm giving it a 4* review with the idea that I'll come back and rate it later after it has rested for a couple of days. For the measurement, I rough chopped the dandelions and then really packed them in, as if it were basil in a traditional pesto. If you don't mind a little bitterness, it is good. I'm thinking of using it as a marinade on lamb.

Spinach and Orzo Salad

I made this for a luncheon with chicken pesto panini and fruit salad and it was GREAT! Only used a 1/4c oil. It made a huge portion, but I ate it basically breakfast lunch and dinner until it was gone. The next day I had to add more dressing as it has absorbed it all and gotten bland. Very pretty, too!

Carrot, Potato, and Cabbage Soup

This was nice, quick and healthy. Not fantastic. I added salt as well as nutmeg, but there was still something missing. It fit the bill for my meatless Monday just fine, with salad, apples, bread and cheese to accompany.

Chicken Soup Au Pistou

Pretty good. I used some leftover rotisserie chicken and just added it in toward to end. I didn't have green beans, so I left them out, plus I doubled the pesto per serving and stirred it in to the soup itself.

Eggplant Supper Soup

This was a perfect quick dinner. I had an eggplant I didn't know what to do with and an extra pound of ground beef. Everything else is staple pantry ingredients. I cooked it longer than the 15 minutes, so the flavors could meld a bit more. My husband loved it.

Bacon and Tomato Baked Chicken

I didn't like this at all, but I didn't follow the recipe exactly. I didn't have red wine vinegar, so I used red cooking wine instead. The sauce was bland and acidic! When the chicken came out of the oven, the skin was gross and rubbery because it had been cooking in the sauce. I tried to salvage it by removing the meat from the bones and skin, stirring the meat into the sauce, adding more basil, plus salt, sugar, onion powder, garlic powder, fennel seed and then cooking it like a normal sauce on the stove. Served over pasta. Won't make again.

Beef Brisket with Mushrooms and Pearl Onions

I've made this with brisket and london broil, and I'm going to try it with chuck roast. It's so easy and delicious! Seriously everyone I've served it to loved it. It's wonderful for bbq sandwiches, which my daughter specifically requested for July 4! With the chuck roast I may end up shredding the beef instead of slicing it - we'll see how the consistency turns out.

Pork Tenderloin Diane

Excellent. I agree with previous reviewer, need more gravy but deglazing the pan with red wine is a good idea. I just put a dollop of gravy on each plate and arranged the pork around it -- very pretty! Husband and daughter both loved it. Served with french onion soup and a green salad.

I'm not a fan of green pepper and I loved this. Fantastic flavor. I omitted pasta, as it was plenty hearty enough without, and I used 50/50 sweet and hot sausage.
