Eggplant Supper Soup

This was a perfect quick dinner. I had an eggplant I didn't know what to do with and an extra pound of ground beef. Everything else is staple pantry ingredients. I cooked it longer than the 15 minutes, so the flavors could meld a bit more. My husband loved it.

Bacon and Tomato Baked Chicken

I didn't like this at all, but I didn't follow the recipe exactly. I didn't have red wine vinegar, so I used red cooking wine instead. The sauce was bland and acidic! When the chicken came out of the oven, the skin was gross and rubbery because it had been cooking in the sauce. I tried to salvage it by removing the meat from the bones and skin, stirring the meat into the sauce, adding more basil, plus salt, sugar, onion powder, garlic powder, fennel seed and then cooking it like a normal sauce on the stove. Served over pasta. Won't make again.

Beef Brisket with Mushrooms and Pearl Onions

I've made this with brisket and london broil, and I'm going to try it with chuck roast. It's so easy and delicious! Seriously everyone I've served it to loved it. It's wonderful for bbq sandwiches, which my daughter specifically requested for July 4! With the chuck roast I may end up shredding the beef instead of slicing it - we'll see how the consistency turns out.

Pork Tenderloin Diane

Excellent. I agree with previous reviewer, need more gravy but deglazing the pan with red wine is a good idea. I just put a dollop of gravy on each plate and arranged the pork around it -- very pretty! Husband and daughter both loved it. Served with french onion soup and a green salad.

Tortellini Soup I

I'm not a fan of green pepper and I loved this. Fantastic flavor. I omitted pasta, as it was plenty hearty enough without, and I used 50/50 sweet and hot sausage.

Winter Root Vegetables

This wasn't very popular this Christmas, but it may be because my family isn't used to some of the vegetables used. However, I saved all the leftovers and put them in my post-Christmas turkey soup, which was delicious.

Sherry Apple Pork Chops

I've made this twice now, and it was wonderful both times. Looks very pretty served over cooked spinach which you can mix with the sauce and it will taste delicious! Garnish with the extra apples from the bottom of the pan, and leave the sauce runny so that the pretty browned chops keep looking clean.

Calypso Black Bean Soup

Chicken Pot Pie IX

This made a wonderful meal! I tasted the filling before I put it in the pie and added some extra garlic salt, thyme, and Lawry's seasoning salt. I served it to three hungry men, who were all very full and very happy at the end! Plus, since I decorated the top crust with the extra crust dough, it was very elegant presentation.

Simple Grilled Lamb Chops

Wonderful. Unfortunately the cut I bought was too fatty, but the meat itself was wonderful. I broiled everything, including all the onions. Served with the onions on top. Delicious!

Kelsey's Favorite Stuffed Green Peppers

Since I don't love the slight bitterness of green peppers I think I'd prefer a more dynamic filler. That said, this was very filling and good. Basic. I added garlis salt, black pepper, basic and Italian seasoning.
