About this Cook
I am an Army wife, mother, student and nurse. I love to cook! I find my peace in the kitchen. I love to cook with the kids, but often I find myself using my kitchen as a refuge, my creative canvas for feeding my family and friends good tasting food full of love. There's a running joke that if you give me a can of mushroom soup I can make anything...I am trying to change this, but it is so darn easy to use mushroom soup as a base for all sorts of gravies and sauces and nobody needs to know I cracked a Campbell's can...right? I would consider myself a "foodie." My husband and I love to eat, cook, grill and entertain. We love to feed people in our homes.
My favorite things to cook
Comfort foods; I dabble in all sorts of cuisine, American, Mexican, Asian, and Italian. I also love to bake, and I make some pretty tasty chocolates!! :)

My cooking triumphs
Beef burgandy (Julia Child's simplified but SO delicious), killer Carnitas are a frequent request amongst my friends. Chocolate truffles of all kinds.
My cooking tragedies
When I first got married, almost nine years ago...I couldn't even boil rice. I made 5 dishes; chicken with gravy and mashed potatoes, spaghetti, fajitas, chicken parmesan, lasagna, and cornish game hens with wild rice. Things have come a long way since then.

Mushroom Orzo
Such a delicious dish!! I used a dried exotic mushroom mix instead of fresh mushrooms, and instead of water I used chicken broth and used a half of a regular chopped yellow onion, but followed the rest of the recipe. The fancy mushrooms added a nice richness, and a depth of flavor. A great side or main vegetarian dish (if you use the water only course).
