Daddy's Popcorn

Soooooo easy and delicious, no need to microwave ever again! But! Note that this popcorn can be made really successfully using the same method but with only 1 T of canola oil and 1 T of margarine (I use Smart Balance), the salt will still stick just fine and the fat is cut down a ton. Have fun!

Vegetarian Meatloaf with Vegetables

This super hit the spot when I was craving "mom" food. I ditched the roasted veggies on the side and made mashed potatoes and green beans instead. I nixed the Worcestershire sauce and spiced it up with a little french onion soup mix and a little bit of soy sauce (which just makes it taste a little meatier). Instead of morningstar crumbles I used dry tvp that I reconstituted - the meatloaf didn't brown so great as a result, it looked quite pink but it was delicious regardless. Yum!

Zucchini Soup II

Great soup! Normally I like chunky soups but I had to find things my friend (recovering from a tonsillectomy) could eat. This was a great choice for sickies and healthies alike. I didn't put in white wine and I used Amy's Organic Cream of Mushroom instead of Campbells. Absolutely everything was pulverized in the blender and it turned out wonderful!

Soft Oatmeal Cookies

These had really good flavor - mine were a little on the dry side though, perhaps I baked them too long or it was because I used one of those 5-grain-flax-super-hippie oatmeals. I'd make'em again though to try and perfect them. Happy baking!

Poppy Seed Bread with Glaze

I lowered the sugar just by about 1/4 then my roommate and I ate both loaves pretty much all by ourselves. Delicious but I should go run a few miles now!

Amy's Cilantro Cream Sauce

I must say this was pretty yummy. I used it to make a southwest pasta dish for a family of 5. I used whole wheat penne + zucchini, squash, drained/rinsed black beans, corn, chopped red & yel bell pepper, and tomato. For the sauce, I used low-fat everything plus a little milk to make it sauce-ier. Everyone got seconds!
