Spicy Three Pepper Hummus

Just as good as the hummus you buy in the store. I made mine in the food processor and needed to add a little water to help it come together to my desired consistency.

Breakfast Casserole II

We thought this was really good but I made a few alterations in a hope to make it a little healthier. I substituted 50% less fat pork sausage, I used a small carton of egg beaters and then only 4 eggs, I used probably a cup of cheese but I used sharp cheddar 2% cheese, I used fresh mushrooms instead of canned, only 1/2 cup skim milk, 98% fat free soup, and probably 20 oz of obrien hashbrowns. We changed A LOT but kept the basic recipe the same.

Baked Pork Chops I

These were SO good! My mother-in-law was visiting and I made these for dinner. She kept saying what good flavor they had. I used panko crumbs instead of bread crumbs...it's what I had in the pantry. My husband and his mother are not fans of gravy so I didn't cook them in the gravy...I just had it on the side. We will definitely make these again!

Marinated Grilled Shrimp

Really great flavor and just a little spicy. We really enjoyed them. I didn't have any red wine vinegar so I used a splash of lemon juice for some acid.

Lentil Soup

This was delicious! I had never had lentils before and this was so good. I had to use salsa instead of crushed tomatoes because it's all I had. I left out the spinach because I forgot to buy it and I left out the vinegar because I just forgot to put it in. Next time I'll definitely add the spinach and vinegar but it was wonderful without.

Best Marinara Sauce Yet

This was really easy and really good. I sauted the onion and garlic in a little olive oil then put in the blender with the stewed tomatoes and tomato sauce. I also added a pinch of basil and parsley. The consistency of the sauce was perfect!

Too Much Chocolate Cake

This cake is so moist and delicious! I made it for a co-wordkers 50th birthday party and received rave reviews! To make it even more "chocolatey" I added chocolate buttercream frosting on top.

Zucchini and Potato Bake

What a great flavor! I should have cut the zucchini larger because mine got pretty soggy before the potatoes were tender. Live and learn...we will definitely make this again. My 11 month old son LOVED this!

Orzo with Parmesan and Basil

Have been looking for new ways to use the basil in my garden. I had a vegetarian friend over for dinner so I used water instead of chicken broth and probably did not use 1/4 c basil. It turned out really great. I can't wait to make it with chicken broth!

Beef Tips and Noodles

We made this tonight with venison. It was a tough old deer so we cooked it low and slow to help tenderize it. We cooked it for 2 hours at 300 degrees. Also, I used 1/2 cup of red wine instead of water and we served ours over rice. Yummy!

Baked Teriyaki Chicken

Really easy and good recipe. I didn't bother boiling the sauce on the stove...I just mixed it all together in the 9X13 pan, turned to coat and baked the chicken turning every 10 mintues. I only had 6 chicken thighs so there was more than enough sauce. I added red pepper flakes to make it a little spicy and I used 2 Tbsp of brown sugar instead of 1/2 cup white sugar to cut some calories.

Zesty Slow Cooker Chicken Barbecue

This turned out pretty good but remember it's only as good as the BBQ sauce you use. We used Kraft Hickory Smoked because it was on sale. Next time I think we'll use a different sauce. I cooked it on high for 2 hours and low for 3 or 4 hours and it was tender. I've never had an easier time shredding anything! We served ours over baked potatoes with broccoli on the side. Yum!

This was really good! I didn't have time to cook the carrots separately and mash them too so I just added frozen peas and carrots to the beef mixture. I did as other reviewers suggested and used the beef gravy mix. My husband and 11 month old son LOVED this!

What's not to love? Breaded and fried chicken, pasta sauce and cheese! This is really good and really easy. We serve it over spaghetti with a side of bread and salad!
