Jeff's Chili Con Queso

Playgroup Granola Bars

This is my first time to make granola bars. I just finished making them and they are really great. I bought a mix of dried fruits and then added a mix of nuts (soy nuts, almonds, sunflower seeds). I think I cooked a little too long...the edges started to darkly brown. Next time I will cook for 25 minutes. Also, will bake on parchment paper next to make for easy removal from pan. Thanks for a great recipe.

Burrito Pie

This was so easy to make and very yummy. I have added this to a list of recipes that my cooking challegned husband can make on nights I don't feel like cooking. We used reduced fat cheese, very lean ground beef and fat free refried beans to try a cut some calories/fat. I also cut everything in half since it makes an incredible amount of food. Half a recipe fed my husband and I for 3 nights. Will defintely make again.

Broccoli Casserole

Very good recipe...great for a side dish at a potluck. I used 26 oz of frozen broccoli (still frozen), no butter (only olive oil), 98% fat free cream of mushroom soup, 1/2 cup light mayo, and reduced fat cheese. I have to lighten recipes whenever I can. I brought it to a 4th of July potluck dinner and everyone loved it. Thanks for the easy potluck recipe.

Fresh Fig Cookies

Pretty good little cookies - better than I expected them to be. (I am still forming an opinion regarding figs in general.) I did not have any cloves so substituted a little cinnamon and ground ginger. The dough did not really take shape until the figs were added and let out their moisture. Well definitely make them again.

Chicken Pot Pie IV

I took the other reviews advise and baked at 375 for 45-50 minutes. I didn't have cream of chicken so I used cream of mushroom and added 4 oz of chopped fresh mushrooms. I didn't measure the cheese but probably did not use an entire cup. My husband actually helped me make it and he thinks it was so easy he could make it by himself next time. Looking forward the leftovers tomorrow night!

Lighter Banana Muffins

These were excellent right out of the oven but not as good the next day. The tops of mine got sort of gooey. Not sure it's from all the banana. I did add vanilla and walnuts, and used 4 bananas instead of 3. Will definitely make again when I have more mouths to feed.

Spicy Three Pepper Hummus

Orzo with Parmesan and Basil

Have been looking for new ways to use the basil in my garden. I had a vegetarian friend over for dinner so I used water instead of chicken broth and probably did not use 1/4 c basil. It turned out really great. I can't wait to make it with chicken broth!

Basil Chicken over Angel Hair

Very good. Loved the angel hair pasta and fresh basil. My tomatoes did not really make a sauce so I added a small can of tomato sauce. So easy to make. Will definitely make again.

Chicken With Mushrooms

This was pretty good. It was a nice concept that I need to work with a little. I think I'll try to thicken the sauce a little next time. I, like other reviewers, did not add the cheese until the end. My husband liked it a lot.

Easy Enchilada Casserole

This was good but not great. My bottom tortillas stuck to the pan. I think it needs a thin layer of sauce along the bottom of the pan. I'm also not sure why it ends with tortillas and cheese. I think the top should be sauce and cheese. Not sure if I will make it again.

Jay's Signature Pizza Crust

Really good and really easy. This was my first time making pizza crust and turned out perfect. I made two pizzas out of the crust. I also took the suggestions of others added garlic salt, italian seasoning to the crust. Can't wait to make again.

Whole Wheat Blueberry Pancakes

Not bad. I've never tried a whole wheat pancake but was specifically looking for one. My husband said he couldn't tell the difference. I used double the amount of blueberries because I had them frozen in one cup baggies.

Greek Green Beans

This was a nice way to use frozen green beans from the garden. My husband said he would like to try this recipe again with green beans straight from the garden, not frozen. We used petite diced canned tomatoes for convenience...no fresh tomatoes on hand.

Sally's Spinach Mashed Potatoes

To be fair, I didn't follow the recipe exactly as I was hoping to cut out some calories and my husband does not like sour cream. I cut back on some cheese and used milk instead of sour cream. I think next time I may cut back on the cheese but try to sneak in the sour cream. I can see how that would make a big difference.
