Cowboy Oatmeal Cookies
I made these once as per the instructions, except using a half and half raisin and choc chip mixture in place of the butterscotch; they turned out good, but a little too oily and missing some flavor I couldn't quite identify. The second time I used 1/2 cup of applesauce and 1 tblspn of oil in place of the 1/2 cup of oil, reduced the white sugar to about 1/4 cup, and used a dried berry mixture from Trader Joe's. They turned out wonderful! They're soft and delicious; they turned out a little cakey, which I enjoy but isn't for everyone. A definite keeper!

Potato Chowder Soup I
I've made this twice now; both times I used chicken stock instead of water, and the second time I added chopped heat-and-eat Italian sausage. It's very good without the sausage, but my fiance and I like it even better with the sausage! This is definately a new comfort food, and comparably healthy when you use 1% milk and Promise margarine. :)

Cola Onion Pork Chops
This is my favorite pork chop recipe! Last night I tried something a little different; I used Cherry Pepsi rather than regular, and I added some uncooked bacon pieces during the last 20 minutes. It added a subtle flavor that was just wonderful!
