Easy Vegan Pasta Sauce

This was excellent sauce and very easy to make. I used extra seasoning and then used in the eggplant tomato bake from this site.

Butter Chickpea Curry

Absolutely fabulous! This is the first time I have made an Indian dish that tastes the way it does at our favorite Indian restaurant. I ran out of cumin so I had to omit that and I used a can of diced tomatoes instead of the soup.

Homemade Black Bean Veggie Burgers

My husband loves these! I am excited to have an better option than the frozen ones I used to buy at the store. I squeezed/drained some of the liquid from the onion and pepper mixture and also dried the beans off a little and it came out perfectly! They stuck together just right!

Zucchini Herb Casserole

This was good! I tripled the spices (except garlic salt), added two additional cloves of garlic, used less oil, 1/2 cup of brown rice cooked in broth, and 1 1/2 cup cheese. My husband and I ate the entire thing for dinner b/c I didn't make anything else to go with it. Could add a variety of veggies but the tomatoes are a must!

Spinach Quiche

Excellent! I used cottage cheese instead of feta cheese. I used half the butter and next time will try olive oil. I also baked the shell for five minutes by itself first. I used fresh mushrooms and cooked them with the onions. I also used less cheese on top than it called for. It made six servings.

Stuffed Bell Peppers

These were by far the best stuffed peppers I have ever had! I can't wait to make them again! I followed the recipe and thought it was perfect the way it was! Next time I will try brown rice to add some fiber! I actually used a little less tomato sauce than it called for because I didn't want to open another can (I was about 1/4 cup short) and I thought it turned out great!

Chocolate Eclair Dessert

This is a great recipe! Even my husband, who is not a dessert eater, said it was really good! To make icing the top easier I iced each graham cracker before I laid it on top. Then I heated the icing for a few seconds in the microwave and connected the already iced graham crackers with more icing. Enjoy!

Multigrain Pancakes

Great pancake recipe and so healthy! I didn't have any wheat flour so I substituted white flour. I also added frozen blueberries at the end. To adjust the thickness of the batter I just added a little more water. These were yummy. The recipe only made enough for a hearty breakfast for 2 people.

Yummy and easy! Love that it doesn't dirty many dishes b/c you cook the asparagus and pasta in the same pot. I used cream cheese and it turned out fine!

Chickpea Curry

This dish was good. Even better on the second day as leftovers. I think I will cut back on the cayenne pepper next time. I like spicy but it was a little too much for me! Would taste good with potatoes!
