Tex-Mex Quinoa Salad

I took another's advice and added 1/2 tsp chill powder, mixed it with the lime and olive oil. I also layered this into a glass container and it was quite pretty. I also used fresh tomatoes, and subbed feta cheese. It was very tasty and light yet still has good protein.

Newport Clam Chowder

excellent. I added the dill with the onions, and probably double the amount. I used canned clams, cooked the potatoes in some soup stock then added all of that, and didn't measure anything. It didn't need the flour, actually. I found it thick enough without it.

Spinach Bread

I also make this with rainbow swiss chard... very pretty. and aged cheddar really adds flavour. I make the dough in the bread machine, let it rise a 2nd time, then bake at 375 for around 20 min.

Barbequed Steelhead Trout

I used the butter mixture (substituting olive oil because I had more) to marinate the fish for an hour or so and that worked as well. The bbq was a nice touch.

Seafood Chowder

Everyone loved this. I used frozen raw shrimp, not peeled, the canned clams and some haddock and there was lots of seafood flavour. I like how everything is cookd together to maintain nutrients instead of draining them away in boiling water.

Italian Spaghetti Sauce with Meatballs

I added the meatballs without browning and they browned nicely and were rated as very tasty by the family. I only substituted for things I didn't have and am looking forward to doing this in the slow cooker.

Veggie Pizza

My 3 year old ate preferred this to a table full of cheese/tomato pizza, cheesies and other snacks. I cooked the crust a couple hours earlier, added the cream cheese and toppings and served right away with no sogginess.. the only problem was cutting it up quickly enough!

Spinach Casserole

I agree with other reviewers that this is a great base to add a little to. I added onions, garlic, basil and chicken breast (already cooked) this time, leaving it pretty bland for the little ones and we added more spices at the table.

this fabulous soup uses veggies that are in season together and is hearty and delicious. I never have canned veggies so used frozen, and dried oregano added earlier in the recipe lacking fresh. I've used different kinds of spinach, or swiss chard instead.

Squash Casserole II

I just put the stuffing on the top, and skipped the butter like many other reviewers. And I used cream of mushroom soup. I, too, sliced but didn't peel or mash the squash and this time I'm using zucchini and yellow croockneck squash to mix it up. Great recipe.

Zucchini in Sour Cream Sauce

this would be great over baked potato as well as pasta. The only change I made was to add one clove of roasted garlic. I like that this really showcases (and helps use up) the zucchini :)

Spinach Lasagna I

This was yummy. Because of previous reviews, I used a flavoured tomato sauce with basil and only 4 1/2 cups of it, added 1/4 c chopped fresh basil, and seasoned my layers with freshly ground pepper. I substituted cottage for ricotta since that was what I had, and used close to a pound of mozza. I also did my cheese & spinach layer in the food processor so it was all a nice consistency. The dish seemed a bit watery when I first took it out of the oven but set beautifully with pretty layers overnight in the fridge.

I used spreadable cream cheese and mine was watery, too. I think maybe it's the spreadable cheese as opposed to the block of it that made it so watery.
