To Die For Blueberry Muffins
Made these muffins this morning because I had fresh blueberries that I needed to use up. These are amazingly great muffins!! Only changes: used self-rising flour so omitted salt and baking powder, added a little bit of vanilla flavoring. So delicious! One problem I did have was with the crumb topping -- mine did not turn out crumbly but instead was more like a paste. I still put little pats of this on top of the muffins before baking and they turned out fine, but would like to know what I'm doing wrong. I've tried to make this before with another recipe and it always turns out this way for me. Any suggestions as to what I'm doing wrong?

Chicken Fried Chicken
Very good...however, I did make a few changes/additions. Per another reviewer's suggestion, I was able to find "Cracker Mix", which is essentially crackers that have already been finely ground. I used 1 cup of this, increased potato flakes to 3 TBS, and added a few dashes of onion and garlic powder. I used thin sliced boneless chicken breasts, sprinkled them with Weber Kick'n Chicken seasoning (don't put to much--it is spicy!), salt and pepper, then dredged in egg and shook in bag of dry mixture until coated. I increased oil to 1/3 cup and cooked covered for approx. 20 minutes, turning only once as suggested by another reviewer. Very good, but I'm not sure how good it would have been without the addition of the Kick'n Chicken!
