Chocolate Chip Banana Bread II

I just made 72 mini-muffins from this recipe and they are delicious! They are great for after school snacks and lunchbox treats. FYI, I used mini chocolate chips instead of regular sized because of the mini-muffin size.

Snow Flake Cocoa

I have made this for two class parties. The kids weren't sure at first because it wasn't regular hot chocolate but loved it once they tried it. Thank you for an easy and delicious recipe for the holidays!

Banana Sour Cream Bread

My kids wanted to make some banana bread for Teacher Appreciaton week. This recipe was easy to make. The small amount of ingredients was perfect for them to stay focused and finish the recipe. And, the bread turned out delicious! They were so proud.

Tex-Mex Beef and Cheese Enchiladas

You know it's good when everyone at the table eats it! We don't have good "Tex-Mex" where we live so this is my go-to recipe when we're craving enchiladas! Only one change, I shred colby and pepper jack cheeses for the recipe instead of American.

Buffalo Chicken Chili

My family loves Buffalo Wings so we were excited to try this on a cool, football watching Sunday night! I halved the recipe and used 4 chicken breasts cut into chunks and cooked exactly as directed. We felt it needed more "Buffalo" taste. I used 2/3 of a 17.5 oz. bottle of Buffalo Wing Sauce. Top with chili cheese corn chips and a little sour cream to cool the heat. Yummy!

Springfield Style Cashew Chicken I

My husband grew up in Springfield and craves Cashew Chicken. We can't find anything like it where we live so we decided to try this recipe. It is RIGHT ON! The only exception is the white pepper. It's too much and not needed. Great recipe!

Grilled Lamb with Brown Sugar Glaze

We ate these for Mother's Day. My children have never had lamb. They ate these like crazy! The spices are so different (from the usual rosemary) and they weren't sweet at all.

Stuffed Peppers with Turkey and Vegetables

These were good. Surprisingly, my husband ate every bite. We're trying to eat less carbs and this is a great recipe for those on a low carb diet. We topped with a little freshly grated parmesan cheese and tomato sauce.

Parmesan Sage Pork Chops

For some reason, I didn't quite get the full flavor of the sage and lemon. For me, it seemed like 3/4 cup of breadcrumbs was a lot for the two porkchops I had. I think the flavor of the sage and lemon was lost in the large amount of breadcrumbs. The porkchops were juicy and I enjoyed this easy recipe. The flavors were something different for porkchops. I will definitely make these again but will decrease the amount of breadcrumbs.

Pumpkin Pie Squares

I made these for Thanksgiving instead of pumpkin pie. I didn't put the nut/brown sugar topping on and istead topped it with fresh homemade whipped cream. The crust is the best! I loved the oatmeal in it.

Rich Chocolate Truffle Pie

YUM! My favorite pie when I was growin up was French Silk. I try not to eat it too often now but this pie was a close second! I think next time I make it I will use a regular pie crust instead of chocolate. My kids helped me make this and had so much fun licking the bowl clean!

This had good flavor. I'm not a big bacon fan but did cook the onions with it and then only used the onions in the crockpot. I added a package of diced ham instead.
