Ham and Beans and More

This is a keeper! Iahve tried many ham and bean soups - never been terribly impressed with any of them. This was delicious. I think the bason and sauteing the ham REALLY make it. Had trouble cooking the beans all the way, but I seem to have this issue a lot. Next time I might try cooking the beans in plain water for a while first.

Moist Turkey Burgers

These were wonderful! My kids - ages 8 and 6 LOVED them, I kid you not. I didn't believe another reviewer when they said their family liked these better than regular bugers, but I do now! I didn't give it 5 stars because I changed the recipe slightly. I just about grated the onion and cooked very well. Didn't want my kids to see any onion pieces! I crumbled wheat bread into bread crumbs and soaked them in a little milk. Squeezed out most of the extra milk before adding to the turkey. I didn't have poultry seasoning so I used Adobo and skippd the soy. I wasn't sure the kids would like too much flavor. They were so moist I couldn't believe it! Will definitely be adding these to the regular dinner menus.

Rosemary Au Gratin Potatoes

I loved this recipes! I was serving this with ham and other sides with lots of bold flavors so I needed a potato dish that was tamer. This was really nice, but not flavorless. For this particualr meal I liked the fact that this dish did NOT have a lot of cheese. I was serving homemade mac 'n cheese as well and that more than filled the cheese quota.

Jumbo Breakfast Cookies

I have to say that these "cookies" were not very tasty right out of the oven. I substitued a few things so I thought that was the problem. However, once they cooled completely (like after an hour), they are sooo good! I can't stop grabbing one each time I go to the kitchen. I substituted 1 1/2 c of the flour with 3/4 c whole wheat pastry flour and 3/4 c. wheat germ. 1/2 cu butter with 1/2 cu applesauce and reduced the amount of water to 1/4c. Also added about 3 TBSP of flaxseed meal. Next time I'm going to try to reduce the sugar - kind of high for a "healthy" snack for my taste.

Breakfast Buns

These are very good! Sweet, moist and easy to make. They are more like buns than biscuits because they aren't very flaky. I actually changed the recipe slightly, but only because I was specifically looking to recreate a blueberry biscuit I used to get at work. So I added about a cup of fozen blueberries instead of the raisins and skipped the cinnamon. It turned out really well.
