Guy Approved Meatloaf
Great Meatloaf! I used 1.3 lb lean ground beef, 1/2 onion chopped (which turned out to be a bit too much), 3/4 c seasoned breadcrumbs (which ended up being not enough) instead of potato chips and crackers, and the rest was the same. I followed pursuit of the other reviews and slathered on bbq on top before covering with foil, and about 10 minutes before the hour was up, added some fully cooked bacon. Then put it under the broiler for a minute to crisp it! Came out too moist, like wet, i think due to not enough breadcrumbs. STILL Very good! Definitely will attempt again soon!!

Home-Fried Potatoes
I tried something a bit different: 2 potatoes for my fiance and I of which I popped them in the microwave for no more than 3 minutes (i would peel them beforehand if you don't like the skins). While they're in the microwave, I preheated a nonstick skillet with both butter and olive oil PAM spray on Medium. Added the cubed potatoes and turned up the heat to HIGH to make them real crispy (on my oven it's a 8 out of 9). Once most of the sides were really crispy I began to add the seasonings: parsley, oregano, parmesan cheese, salt, pepper, and garlic powder. DELISH! We served them with a side of ketchup and will definately be making these again!

Seven Layer Taco Dip
I've been using this recipe for the past 2 years and I loooove it! The first time I made it for four of my guy friends, they couldn't stop eating it and before the night was over the platter was clean. I always make sure to use a bit smaller of a pan so that the bean/taco and cream cheese/sour cream ratio is balanced.
